I got a Mindful Chef box this week and last night we had sticky tamari chicken & togarashi tenderstem (which included new potatoes roasted in sesame oil - delicious). I've got the leftovers for lunch today.

Tonight it's Nepalese pork curry.

Last night I made a really good pasta bake - smoky bacon, black olives, spinach, slow cooked red onion and pepper, all in a rich red wine/tomato/garlic sauce, with a thick cheese layer on the top.

Tonight Mr K is making beef green curry.

Cheese and mushroom homelette, with couscous flavoured with chipotle and roast garlic powder, and little gem lettuce salad with sliced baby plum toms.

Scones with clotted cream and the first batch of bramble jelly, with a decaff tea.

The small went for chicken dippers, sweetcorn, alphabites, himself has chilli beef stir fry with egg noodles, and I am having a chicken, bacon and avacado baguette some of those Mister Cheezee tortilla chips ❤

So what's in it that makes it Japanese then?

It’s made with this lovely stuff. Japanese curry roux. A solid block of stuff you chop up and throw into water plus your curry ingredients and within minutes you have thick, tasty curry in the Japanese style.

Tonight Mr K is making beef green curry.

Fucking hell, this was so good Crunchy rainbow veg, roast beef shreds marinated in lots of delicious flavours...the perfect balance between light/refreshing and satisfying comfort food.

Spaghetti tossed in olive oil/garlic/chilli (with added chipotle flakes for smokiness), doused in parmesan, topped with sundried tomatoes and black olives.

Scones with clotted cream and bramble jelly, and a decaff tea.

Macaroni cheese, baked chicken breast with soda bread and Red Leicester sangwiches.

Small had the rest of her tomato pasta, himself I made a chicken coconut and cashew curry with wild rice. I had a toasty club style sandwich of peri peri chicken breast, streaky bacon, avacado, mayonnaise, red cabbage and wasabi..it was good.

Turned out to be salmon, rice and peas/cabbage. Was very nice.
