What's for tea tonight? (#8)

Made something called the “ultimate vegan chilli” this afternoon, which took ages and involved a lot of mincing ingredients, but it’s worth the effort:

ULTIMATE CHILLI - BOSH!

I've not seen that recipe before, but I do a very similar veggie chilli for OH, I don't mince everything though (he likes to have discernable bits of veg in it), but if I was going to mince it all up a good food processor would make short work of it :)

Also a variety of dried/smoked chillies is a sound investment.

The recipe tasted amazing, but all the mincing is overkill and made it more sloppy than it needed to be. I think it would work just as well with finely chopped veg, tbh.
 
No tea tonight because I had a massive late lunch with the in-laws. It was a pub specialising in fish, so I went the whole nine yards: salted cod croquettes, sardines with gremolata, then a massive plate of beer-battered cod, tartare sauce and minted mushy peas. Don’t think I’ll be hungry again until tomorrow lunchtime 😆
 
I'm still not well (rsv not corona) and didn't feel up to cooking and eating. I slept until gone midnight anyway, so am in that kind of "not sure what happened to Sunday" twilight zone type thing (and I missed Deathly Hallows part 2 on ITV and am furious with myself). We have a bit of bread left so I might have some toast in a bit if I wake up enough to feel hungry. Otherwise I'll go back to bed. Probably going to eat a massive amount when I feel a bit more well! Will report here with full details when that happens!
