Made something called the “ultimate vegan chilli” this afternoon, which took ages and involved a lot of mincing ingredients, but it’s worth the effort:

The recipe tasted amazing, but all the mincing is overkill and made it more sloppy than it needed to be. I think it would work just as well with finely chopped veg, tbh.I've not seen that recipe before, but I do a very similar veggie chilli for OH, I don't mince everything though (he likes to have discernable bits of veg in it), but if I was going to mince it all up a good food processor would make short work of it
Also a variety of dried/smoked chillies is a sound investment.
