I didn’t know the Italians used whole eggs. I’ve been using only yolks in carbona, which is a pain as I’m always throwing away the egg whites.
I’ve tried that and just end up with frozen egg whites in the freezer for a year or however long it takes before I throw them away. I’m just not a meringue kinda guy.You can freeze egg whites for future use in meringue or whatever else you might need egg whites for - they freeze fine
