Cheese Fans! How far do you dare go?

There are French, German and Spanish cheeses which use mites... which seems only slightly more palatable than maggots :eek:

I draw the line at mould :)
 
These larvae are deliberately introduced to the cheese, promoting an advanced level of fermentation and breaking down of the cheese's fats.

well it breaks down the saturated animal fats present in cheese and which are meant to be bad for you. so it can't be that bad from a nutritional point of view, especially with these all protein rich maggots.....

The cheese is typically consumed with Sardinian bread (pane carasau) and Cannonau, a strong red wine.

it better be very strong, I can tell you! I'd probably have to have several bottles of the stuff before attempting consumption of this cheese. is that what they call sardinian courage?
