I hadn't heard of panisses before today. They're chips, made from chickpeas. Well, chickpea flour. Which I have bought and don't know what to do with, so why not make it?
Had them for tea tonight and fuck me, they're good! Some of the best 'chips' I've ever had. Amazing. Didn't get a picture, but mine looked a bit like these. Bit more brown in places, and not as neat, but pretty close.
They're crispy on the outside, and lovely and soft on the inside. Almost like a cross between polenta and I guess halloumi? Much softer than halloumi, though, and much better tasting than polenta.

I followed this recipe, but shallow fried instead of deep fried:

It worked fine, but I overcrowded the pan and they broke up a little when I was flipping them. Didn't matter.
Also, no need to leave them overnight like this recipe says. I left it to cool for less than an hour before making the chips. All good.
