What are you baking?

Crumpets are quite tricky. I always found they stuck like glue to the rings and gave up trying to contain them. Just cooked them like scotch pancakes.
 
Due to unexpected item in wallet, I am in budget mode this month, so it's all about having my sweet tooth satisfied with what I already have in.

With that in mind, I'm planning to make a lemon 'Victoria' spongecake, with a lemon curd filling and lemony 'buttercream' (made with olive spread) topping. Sounds delicious in my head. We'll see how it pans out!

One of the local shops gives their bananas away for free when they start going brown and squidgy, plus I get free eggs, so making banana bread is a weekly thing atm.

Usually add walnuts, sultanas and a mix of spices but I've used dark chocolate chips this time as I forgot I was out of sultanas. Not totally sure how that's going to work with the spices I'd already added :hmm:

I'm on a budget mission this month, so using whatever I have in the cupboards. Decided to make a sandwich cake. Was gonna just put a load of bramble jelly in the middle and dust with icing sugar, then realised I had some lemon essence in the cupboard and a shit ton of icing sugar, so made this:


I used olive spread instead of butter, and put the 'buttercream' icing on the top not the middle. I put 3 tsp of lemon essence in it too, the icing.

Mine is not as tidy as this either, but fucking HELL it tastes phenomenal!! Also - 12 slices? get fucked :D 8, at a push :D
 
These will taste way nicer than they look (I hope!).

Vanilla muffins with milk choc chips (bought in error but thought they'd go well in these) and homemade strawberry jam melty middles. Considering a dusting of icing sugar but might be TOO sweet then.

I was going to try and bake this weekend but I fuck up almost everything I make at the moment. 😄

I made a no bake mini egg cheesecake that didn’t set last weekend.

I did also make some Parmesan and chilli biscuits which were pretty good but needed to be thicker as they were more like crisps.

I spent a ridiculous amount on the M&S equivalent over Christmas so I’m hoping perfecting these will be a cheaper alternative. 😄
