You don’t want to reinvent the wheel, the jacket potato is comfort food, so keep it simple, don’t fanny about. Having said that, the best one I ever had was in Tuscany, where this restaurant I went to had wrapped the potato in tinfoil, baked it and then topped it with masses of whipped lardo, which is pig fat. It was delicious.

I can't eat potatoes. Or beans. Too much fibre. Never really liked either, anyway…
 
I’d never go for cheese and beans on a baked potato.

My first choice would be (cheddar) cheese and coleslaw (cheese before coleslaw).

Then, if no coleslaw is available, it’d be (cheddar) cheese and Branston pickle.

If neither option was available, I’d probably not have baked potato. I could have coleslaw and baked potato without the cheese. But probably not cheese without something else. At very least spring onions. But I think baked potato and just butter would be preferable to baked potato and cheese without coleslaw or pickle.

I might consider baked potato and hummus as an outlier, but it wouldn’t be my favourite thing to do with either.

Baked beans are best on toast without cheese. I like to sprinkle liberally with Tabasco. The toast should be buttered (I use Vitalite these days). I wouldn’t add cheese, although Mrs LR likes melted cheese. I think it detracts.
