How do you have your kebab?

I had kebabs occasionally as a kid, because my mum was on a permanent diet and a small chicken shish isn’t actually bad, fat/calories wise. I’d sometimes have chicken but more often doner- because that was the default, and I suspect cheapest option.

As an adult though, I wasn’t that into them, preferring the wrong-burgers from dodgy vans and kiosks for early hours filth.

More recently, though, I’ve been quite happy to go for a lamb shish. Garlic sauce, salad but no chillies or onion, ideally in a flatbread wrap. We’re very close to a really gourmet place that does all kinds of swankykebab variations, and always send rice as well as salad and bread.

Local chippy does a doner, chicken or mixed kebab but there are no chillies and the salad is mainly shredded iceberg lettuce. No proper Turkish/ Greek fast-food stores anywhere near.

I had no pitta breads, and the nearest kebab shop is rank, so I had to settle for a home made burger :(
But it was nice.

That looks nice. Even if I'm not sure about the white stuff.

There's another thread on urban (of course) all about burgers :)

Delivered.

Either a wrap involving donner and chicken, or a good old fashioned donner in pitta

Both with all the salad, garlic sauce, and chips.

God I'd destroy a kebab right now - and I've just had my packup

Yup, but I’d also add jalapeños to that.

House kebabs are decent - all types of kebab meat - but they are too big for one, best for sharing tho even then it’s a lot of meat.

Thanks, was pretty good but obviously not the same flavour as shop bought. Unless you know the right blend of spices you’re pissing into the wind, but I went with the below which gives a decent enough kebab. All kneaded well, fridged overnight to blend flavours, then stuffed down into an 800g tin (ex tomato purée) and steamed in electric pressure cooker for 60 mins.

500g beef mince
100g breadcrumbs blitzed into powder
0.25 tsp mixed herbs blitzed
10g salt
5g cumin powder
3g coriander powder
1 lvl tsp black pepper
2 lvl tbsp plain flour
1 lvl tsp garlic powder
1 lvl tsp onion powder blitzed
1 lvl tbsp Podravka vegeta (all purpose seasoning)
2 finely minced garlic cloves, blitzed
Half small onion, chopped then blitzed to paste

I just reheat the kebab slices in airfryer at 200C for 6 or 7 mins. They don’t need much more than to come up to temperature, just a bit of sizzle on the edges.

Looks amazing. Maybe I'm being daft, but isn't the flavour wrong as it's normally made with lamb?

Perhaps traditionally in turkey, but do you think standard takeaway fare is made with lamb? That’s the most expensive meat unless I’m very out of touch with prices, which is possible.

My local takeaway has a sign saying the meat their doners are made with is 100% beef, but that is not in UK.

Uk takeaway kebabs are always lamb. Or chicken, obv.
