Are those the Delia ones with mint? I saw them this morning whilst googling for courgette recipes (16 for 50p in the market woohoo!). I'll probably omit the eggs though as I have none, and I might use goats cheese instead of feta then just use a different herb (I might be able to save some basil leaves and give it a good send off). I'd better check I've got flour too.
If I have to go and buy flour, feta, mint and eggs I'll get more courgettes and make roasted courgette and garlic soup tomorrow.

I don't like mint so don't use it and iirc have also made them without an egg once cos I forgot and they were more or less fine.

They're a bit delicate to turn the first time, but after that they're pretty indestructable.

Do them varying thicknesses too, cos thinner ones come out crispier, but then it's also nice to have the lovely moist texture of the thicker ones.


Oh and I don't bother at all with the flour!

Easiest way I've found is just to make them up on a board and dot the melted butter on to the top, then put that side straight on to the baking tray and butter the other side then.

Does that make sense? :confused:

I'm having prawns as well but fried with garlic as part of a Tapas supper with some Patas Bravas, Anchovies, Salad and Ciabatta to soak up all the olive oily juices!

I may even insist we open a bottle of white wine:)

It was really nice and the leftovers which I just had for lunch were even better.

Tonight will be a curry from the fabulous Khan's of Brixton. :cool:
 
I'm going to do home made meatballs baked with pasta and tomato sauce, prob with some sorta garlic bread and maybe a green salad?

And lots of delicious red wine. Oh yes.

Do I need a pudding - I'm entertaining you see. What would you recommend?

It's just really basic, a chuck-it-all-in thing

Gently fry onions, then garlic, then chuck in a (I heap them slightly) teaspoon each of turmeric, chilli powder, garam masala, ground cumin, ground coriander. Stir, for a minute, and then chuck in big chunky chopped aubergine, and coat that, then add tinned toms, tin of chickpeas, tin of borlotti beans (or any beans, but not baked beans:D ), then a bag of spinach and some veg stock (to liquid it up a bit - as much or as little as you like, depending on how you like your consistency), bit of salt and black pepper, simmer.

You can chuck in owt - courgettes, leeks, spuds - bung it all in a big stockpot and simmer. I always make a huge amount cos I just like to, so I have a fuckload left to freeze :)

I always always put another half a teaspoon of the chilli too, cos I likes it HOT :D

The recipe came from BBC Good Food's '101 One-Pot Dishes,' but I adapted it because I didn't have everything it asked for (and 'cos theirs was for 4 people, so I halved it), so here's an amalgam of mine and theirs, the quantities of stock and rice being what I used:

1tsp olive oil (they said butter)
150g risotto rice
350ml stock (recipe said chicken, but I used marigold)
1/2 onion
1/2 pepper (not in the recipe but I had one that needed using up)
1 clove garlic (not in recipe, but I like it)
1tsp oregano (ditto)
handful frozen peas (ditto)
c150g chopped fresh tomato (recipe said cherry: I used ordinary)
4 rashers smoked bacon, chopped
about 50g parmesan (I also use a bit of mature cheddar)
The recipe also recommended a glass of white wine (which I don't have)

Method is pretty standard: soften the onion, garlic and bacon and then add the tomatoes and the rice and cook, stirring until coated. Add the stock, stir a bit more, cover and then stick in an oven preheated to 200 degrees. The recipe said bake for 18 minutes, but it took nearer 40. It's a good idea to take it out and stir it once or twice as well.

Worth a try, definitely. I'll be doing it again. :D
 
i had pasta with hard boiled eggs , brocolli and mushrooms. i am still a bit peckish so may go on the raid in a minue but i am now at my sisters house and she hasnt been food shopping

I did fishfingers, carrots, potatoes and spinach tonight, but one of the neighbours came round with cake just as we were about to eat, so the kids just wanted cake and I wished I hadn't bothered cooking at all :(
 
Ended up just doing spaghetti with olive oil, chilli and garlic as I was busy baking and Mr K was exhausted enough not to mind what was put in front of him. It was right nice :)

Had a cookie for afters - well, got to make sure they've come out right, eh?
 
blimey, i'm about to have leftover rotiserie chix and mash/gravy plus green beans and mac/cheese. actually, its pretty good!!

and maybe some strawberrry ice cream :)
 
last night was pizza cos i was too busy with cakes

tonight will be cake and thai in the pub

I feel really full still from last night :eek:
 
I had sea breem last night, which I hadn't had before. It was really lovely, deffo have that again. I did home-made oven chips with it.

Tonight is over to the in-laws for Bonfire-y goodness. Soup! Sausages! Boston baked beans! Jacket potatoes! Yay! I'm making some bread rolls to take along.
 
i had chicken with roast peppers, garlic and pasta.

with fried dough twists and eggcakes for pud
 
Couple of rashers left over bacon, chopped really small. Fried with garlic, onion, kidney beans, green pepper, mushrooms, chilly, small cubes of potato and couple of chopped tomatoes

not sure what to call it. Eat it quite often.
