What's for tea tonight? (pt3)

It's supposed to be my amazing sausage and shallot casserole tonight but that takes ages to prepare and there's a mountain of washing up blah blah blah and I'd rather hang out and have some fussing with my boy then slave for a couple of hours once I get in.

Oooh we're having a chicken casserloe that I cooked last night to eat tonight so it shoudl be all lovely and melded....I think I might pick up a good bottle of white to have with it :)

Sounds great. I do one but spend ages browning the sausages well as I like the thick skin effect. Shallots rock in a casserole.
 
Have decided to go with the sausage cassserole. It's good comforting food and I can do the bare minimum of washing up needed tonight (the boy cooked last night and used every single pan/implement/chopping board as far as I can tell)

And a sit down with a nice glass of wine whilst it's cooking. And jacket spuds too. Oh yes!
 
ooo a nice glass of wine would be perfect too - but we have lager :oops: so that'll just have to do :D

well last nite i ended up having a ham & turkey samwich, some beef veggie soup and some wonderful strawberry ice cream (haagen daz)

tonite I really MUST have a real dinner, something with gravy and mash and some real veggies that aren't frozen or "reconstituted" :)

and fresh buns, yeah thats the ticket
 
Looking like something from the freezer - probably chicken and chorizo casserole with a bit of mash on the side :)

Hmm...

How can you spend a couple of hours on a sausage casserole? Ok, so sausages take a little longer to brown than you expect, but given that you can chop other things up at the time, I'm a little confused to why the prep takes so long. It takes a little while on the unsupervised simmer admittedly, but one of the reasons I like sausage casserole is that you haven't got the effort of trimming and preparing the meat,

Quite tempted to do the takeway/ready meal thing myself tonight, particularly as LQ's been down with virus for a few days and I'm tired of all the housework.

But reckon it'll be a family recipe of chip-up beef - got to love those factual West Indian recipe descriptions (stew chicken, curry goat etc) with peas and rice. Essentially it's thinly sliced braising steak, cooked in a little stock, spice and casareep (cassava extract) and lots of onions.
 
Last night remembered I hadn't had baked spuds & beans for months. I have no idea how such a simple food can give so much pleasure, but somehow they do.

Tonight will be a dash to get some pasta in front of the littlun before the start of weekly internet radio show, then cajoling her to eat/helping her into witch's costume/answering door to trick or treaters/doing colouring in while trying to DJ. Will probably descend into slapstick.

A home made quiche has just come out of the oven and is cooling down. Not sure if a cheese, tuna, leek and red pepper filling will come together but I wait in hope.
 
i picked up a rotiserie chicken along with mash/gravy, green beans, macaroni 'n cheese and cornbread muffins all for $19.99. Oh and a ceasar salad was included too.

I should get two whole dinners out of this one :D :p
