I had Fajitas tonight - roasted veggies (courgette/red onion/green pepper/mushrooms) in tortillas with lettuce, tomato, cucumber, cheese, salsa and lots of jalapenos.

Are those the Delia ones with mint? I saw them this morning whilst googling for courgette recipes (16 for 50p in the market woohoo!). I'll probably omit the eggs though as I have none, and I might use goats cheese instead of feta then just use a different herb (I might be able to save some basil leaves and give it a good send off).
