What's for tea tonight? (#8)

Misc green chilli, spinach, prawns and creme fraiche. Or however it is spelt. White wine, white chocolate.
 
beef stew ( welli say beef, there was 1 small portion of beef with carrot,turnip,leek,beans to bulk it out ) with broccoli, cabbage,mash potato and peas.
 
My dinner was delish...the roasted veg I had came from a tray that was £1 in Asda. It had potatoes, red onion, parsnips & carrots tossed in oil & parsley and was enough for 2.
 
Cassoulet with green beans. Had some sticky toffee pudding and custard for pudding but decided to save it for tomorrow as I was too full :cool:
 
I've got some leftover rice from last night so I might do some sort of veggie/egg fried rice. Sounds a bit uninspiring though.
I could mix the rice with some tuna and pesto.
Oh, I dunno.
I need some inspiration :(
 
Spicy tomato rice?

1 tbsp of butter
2 cups of white, long-grain rice
1/3 cup diced jalapenos
1/3 cup diced green onions
1 clove garlic, crushed
1 tsp chili powder or paprika
1/2 tsp chipotle and/or cayenne
1 tsp cumin
1/2 tsp salt
2 1/4 cups chicken stock
1/2 cup of tomato sauce
 
Pork and apple sausages, mash (can't decide on mustard or sage), onion gravy (maybe a bit of apple sauce mixed in there? Dunno...) and peas. Om nom nom nom.

Think I'll break out the slow cooker tomorrow, as I'm working from home.
