What's for tea tonight? (#8)

As we have burger buns that need using, I'm having burgers but I'm not sure I'm feeling it.

I've been through a few days of not really fancying much food. (I have been eating, just not very into food atm)
 
Proper autumn food like the sound of savoy cabbage in minestrone. 4 buttered breadbuns to dip in it would do me.
One of the very best things about autumn and winter is the food. It is very lovely, and very good for you too. Here's the recipe if you fancy having a crack at it yourself:

Savoy Cabbage and Bean Minestrone

  • 2 tablespoons extra virgin olive oil
  • 1 onion, chopped
  • 1 leftover Savoy cabbage (after you’ve removed the green outer layers, or you can use the whole thing), thinly sliced
  • 1 carrot, washed and grated
  • 1 stick celery, finely chopped
  • 3 cloves of garlic, minced
  • 1 litre vegetable stock
  • 400g tin of cannellini beans, drained (no need to rinse)
  • Rind from parmesan cheese (or a good handful of grated parmesan)
  • Sea salt and black pepper
  • Couple of small handfuls of soup pasta
  1. Gently fry the onion and celery for 3 mins.
  2. Add carrot and garlic, and fry for 2 mins.
  3. Add cabbage, fry for another 2 mins.
  4. Add a pinch of salt and a good grind of pepper.
  5. Add stock, parmesan rind/grated parmesan and beans.
  6. Bring to boil, then cover and simmer for 30 mins, stirring occasionally.
  7. Add soup pasta and simmer for another 10 mins.
  8. Partially blend the soup with a stick or jug blender. You want some chunky bits and beans left in.
  9. Taste and adjust seasoning to your own tastes.
