What are you baking?

When I have had it its like a carrot cake but with courgette in place of carrot iyswim?

Yeah, pretty much...

Sometimes a baking session is an afternoon with friends, friendly chatter over tea as the scent of scones wafts from the oven. Sometimes it is something to do when you wake; the powerful scents of yeast a rousing start to the day. Sometimes it is the frantic run up to a party, hours of stress mitigated by the joyous faces of those around you.

Sometimes, dear friends, a baking session is a drinking session punctuated by sporadic bursts of activity. A sordid mess ending at 3am in a pile of used piping bags... Maybe just one more choux bun, just a bit of creme patissiere.
 
Apple crumble cake:

3oz/75g butter
9oz/225g plain flour
2 tsp baking powder
2oz/50g caster sugar
1lb/450g peeled, cored and diced eating apples, with some lemon juice to stop them going brown
1 medium egg, beaten
1-2 tbs milk
Cinnamon to taste
Raisins (optional)

Heat oven to 200c, and prepare a 7inch/18cm round cake tin
Prepare apples
Sift flour and baking powder, and rub in butter until fine crumbs. Add cinnamon.
Mix in sugar, then stir in apples, then stir in the egg. It's a dry mix! Add raisins if using.
Add milk to bind together into a stiff mixture.
Put in tin, smooth down and bake for 45 minutes until a skewer comes out clean.
Cool on wire rack. Dredge with icing sugar if wanted. Can be served warm.

Nectarine and blueberry crumble.

Made about 800g of home made butter, and Artichoke was adamant it was going to go off. So I was well up for making a rhubarb and apple crumble, 'til I realised that I was srsly wondering what to do with the nectarines and blueberries I'd bought this avo.

Fingers crossed!

Bit disappointing tbh. Blueberries a bit the wrong side of watery. Benefiting a load from a dash of lemon juice and a bit of cream :D
 
made raspberry muffins and veggie sausage rolls as our holiday lunch...it should keep us going today & tomorrow..:D
