What are you baking?

Made these last night. I didn't like them much first time round, but this time I used a generous pinch of sea salt flakes, 3 tsp vanilla extract instead of 1, and better dairy-free dark choc. Absolutely gorgeous!

 
Need a bit of advice please. First, I'm planning to make some custard but don't have any corn flour. Is there a sub I can use for this or should I just bite the bullet and go and get some?

Second, does anyone use permanent wax paper? If so what is your preferred brand?
 
Made this morning, pear and ginger cake. Pears still feel a bit hard, but am hoping the bite contrasts well with the gooeyness of the cake.

Will report back at teatime.

Well, it deffo would be better with riper pears, but I quite liked the contrast between the bite of the fruit and the gooeyness of the ginger cake. Amazing flavours. Will make again but with softer fruit.
You could try cooking the pears on their own a bit first if they're quite hard. I make a spiced quince cake that has you poach them until they're fully cooked first because quinces take ages to cook, but you could just start to soften them up a bit - or try baking or microwaving if you were worried poaching would make the cake too wet..

That looks lush, been ages since I had pears. Used to have a pear tree in OH's garden in W Norwood but the pears weren't very edible, hard and bitter.
 
Was planning to bake some apples this afternoon, so knackered that I'll give it a miss and try again tomorrow to summon up some energy.
Storm Agnes will no doubt gift me some more windfall apples ...
 
I still have to do the icing, but just had a cheeky nibble of it and it tastes fucking great! It's this one. Quite heavy on the sugar but totally works.
