Different voting habits. More widespread postal voting as a norm out there so not necessarily tilted towards the Dems. Because of that, it seems to have made the later arriving mail ballots more GOP because they didn't have their shit together as much as Dem voters who had them in weeks ago and thus had them counted earlier

Also, that update isn't THE update. 90,000 left in Maricopa, last big drop coming shortly
