The macaroni cheese thread

i cracked and made macaroni cheese for lunch. the kids had seconds! they never even finish what's on their plate, never mind have seconds! :eek:

it was lush, obv. i used two kinds of cheese in the sauce, plus bacon & fried onions.

mine never looked this good *yum yum*... i think i need a midnight snack now, feeling peckish.

Cheese sauce is really easy. Melt some butter (about 1tbsp for a mac cheese for 4) in a saucepan, add an equal amount of flour, cook it for 1 min then add milk bit by bit (like when you make a risotto), stirring well to get rid of any lumps, then add in a bunch of grated cheese. Pour it over mostly-cooked macaroni in an oven dish, sprinkle over more grated cheese and/or breadcrumbs. Bake in the oven for 20 mins.

This is how I do it, but with some toms and a bit of onion.

What about marmite? has anyone ever added marmite to the cheese sauce? I bet it would be good.

Not sure :hmm: I'm thinking a drizzle under the grated cheese but on top of the macaroni might be nice?

I had mac and cheese at Byron the other night instead of chips. It were lush :cool:
 
I don't get on with fusilli too well, just doesn't seem right to have macaroni cheese without some sort of tube for the cheese sauce to fill. I can cope with the shell shapes at a push.

mrsfran - marmite could work, reckon you'd have to put it in the finished sauce so it was hot enough to melt.

My eldest comes back from her Nana's tomorrow after a half term holiday - I think we'd better celebrate with a massive macaroni cheese :D

Do you not let your sauce thicken once all the milk is added? :hmm:

ringo, I don't have time to read the whole thread so post or pm me your top macaroni cheese recipe, the veggie version. I will cook it this weekend and report back because truth be told, I've always found it a bit bland. Adding tomatoes, onions, mustard etc might do it for me.

I also love oven roast cherry tomatoes, with a few crushed garlic cloves thrown in and a drizzle of olive oil & balsamic vinegar, as a side dish for macaroni/cauliflower cheese (yes, the C word again). They cook in the oven at the same time as the pasta, hardly any extra work involved.

Oh, wait. I might make tartiflette. Both rich comfort food for cold winter evenings
 
Mr nags is resolutely against the inclusion of tomatoes of any form in mac cheese. I have told him, however, that ringo knows what he's doing so that's what he'll be getting. Will have to wait until next weekend though as have a lot of non compatible vegetables that need eating this weekend.
 
I love tomatoes, I love cheese and I love cheese and tomoatoes. But not cooked cheese and cooked tomatoes. Or cheese and tomato sandwiches.

It's a complex issue.
