The macaroni cheese thread

well i've just looked at this thread again and I'm appalled that people are not making their own cheese sauce. this place is going to hell in a handcart.
Most people are making their own cheese sauce. I make it most of the time.
 
Kraft Dinner is sold as something that can be easily and quickly made. It's often one of the first things that kids learn how to make, because it's so easy. It's not common here for people to make macaroni dinner from scratch.
That's not cooking. Surely some people cook in Canada?

Cheese sauce was probably the second thing my mum taught me how to make, after scrambled eggs.
 
i cracked and made macaroni cheese for lunch. the kids had seconds! they never even finish what's on their plate, never mind have seconds! :eek:

it was lush, obv. i used two kinds of cheese in the sauce, plus bacon & fried onions.

I can't believe I've never seen this thread before until now.

Macaroni Cheese is my long term cooking obsession, ever since I was about 14. I'll share my favourite recipe for it later if I get a mo, but the one I was planning for tea tonight involves nothing but macaroni, proper cheddar cheese (from around Cheddar) and a tiny drop of white truffle oil.

I've been lurking on this thread since its inception. I make my own cheese sauce, I wouldn't have it any other way. By hand, with a fork first (to mash lumps), then a wooden spoon. Perfect and lump free each time. I discovered today that a sprinkle of Marigold vegetarian bouillon makes it even better. Btw, I made cauliflower cheese, I hope it's not heresy on this thread. I serve it with home made tomato side on the side and a green leaves salad. Cauliflower cheese ftw.

Oh, and my fave shapes are conchiglie or penne. My least fave, spirals. Don't ask why, they all taste the same, but isn't it funny how some shapes are appetizing, while others aren't?

That looks like the 2 dishes ms starfish made recently that we had for dinner 2 nights running.
 
I would like to make a macaroni cheese. I've never made one, it always struck me as a lot of work. But that's because I've never made a cheese sauce, it's just not something we ever ate when I was growing up.

Cheese sauce is really easy. Melt some butter (about 1tbsp for a mac cheese for 4) in a saucepan, add an equal amount of flour, cook it for 1 min then add milk bit by bit (like when you make a risotto), stirring well to get rid of any lumps, then add in a bunch of grated cheese. Pour it over mostly-cooked macaroni in an oven dish, sprinkle over more grated cheese and/or breadcrumbs. Bake in the oven for 20 mins.
 
Because it is the macaroni cheese thread. Perhaps we need a new cauliflower/broccoli cheese thread.
The thread title does not dictate what is discussed. If the subject of cauliflower cheese comes up, there is no reason not to discuss it
