fish. steamed veg. feel like getting drunky tho. can't however as need to get bikini thin for summer hols. meh. boring!

Leak, new potato and stilton bake

Slice 1lb of new potatoes into 5mm slices and boil for 10 minutes.
slice 1lb of leeks into 10cm slices and steam for 8 minutes (take 'em out before they're completely soft, you want a bit of crunch).

Make a quick white sauce:
25g butter and heat until melted.
Add 25g plain flour.
Cook for 2 minutes then add 300ml milk.
Bring to almost boiling, stirring constantly, then add black pepper, a teaspoon of dijon mustard and a decent block of roughly chopped stilton, say 250g.
Layer the potatoes and leeks (or just roughly mix them up) in a baking dish.
Pour the cheese sauce over the top, mix it in a bit, add little grated cheese to top.
Bake for 20 minutes at about 180.

Was lovely with steamed broccoli, would have been nice with a sausage or two as well.
 
tuna and sweetcorn. should have been in a sandwhich, but the bread was mouldy. i have some tzaziki to have with crisps in a bit, as my peppers and cucumber has gone off. i am trying to use up cupboard and freezer stuff, can you tell ? :D
 
probably prime rib with loaded baked potatoe and blue cheese chopped salad :)

or it could be chinese szechuan with egg roll and egg drop soup...

I've just stuck some chicken wings in a Thai-ish blitzed up marinade of soy sauce/spring onion/chilli/lemon juice/fresh coriander/fresh basil/honey/garlic/ginger.

Should really have em with noodles and some stir fry veg or something, but we've got leftover stuff that needs using so kids are having them with pasta and pesto and I've got the last of my puy lentil and mushroom stew....will no doubt do some broccoli and green beans too. So errrrr.....a bit of a mish mash! :D





On an even more exciting note - I just had a melton mowbray pork pie with mustard for breakfast... :cool: :hmm: :cool:
 
I made a gorgeous butternut squash and barley risotto last night :cool: Never made risotto before, and despite a few mid-cook wobbles it turned out brilliantly. God knows what I'll be making tonight though, am trying to use up what's in the house before we move next weekend and I'm down to the emergency tins :eek:
 
Something involving broccoli, as that's all I've got in the fridge. Well, broccoli and a kohlrabi. But fuck knows what you do with kohlrabi.
 
Griddled chicken thighs that are currently residing a a bath of lemon, garlic and thyme avec roasted cherry tomatoes and green beans.

ooooh, do you have a recipe for that? or did you just wing it :eek:
 
Hehe, definitely didn't wing it :D Can't remember quantities, although tbh I usually make them up to some extent anyway, but here goes:

Fry a chopped leek, two chopped garlic cloves, a chopped red chilli and some sage and rosemary in olive oil for a few minutes. Add some pearl barley (think I used about 6oz) and stir to coat with oil. Add a load of cubed butternut squash (I used half a massive one) and stir round, then add 1/4 pint of hot stock and stir till absorbed (I didn't actually do this, just let it absorb naturally). Do the whole ladle-of-stock-at-a-time thing, stirring occasionally, till the barley and squash are tender. Take off the heat, stir in a load of Parmesan (or substitute of your choice) and leave for 5 minutes. Season and scoff.

These approximate quantitites made enough for three massive portions btw. Enjoy! :)
 
well last nite i ended up ordering pizza. tonite i think i'll get a nice dinner....some type of steak with a jacket potatoe and a salad of some sort :)

i really need some beef :)
 
Potatoes and onions - really quite tasty, it needs a name - what do you call fried up thick sliced potatoes and onions, sprinkled with dry sage, with butter and whole cloves of garlic tucked in, then some chicken stock infused with saffron poured all over the top of it, then banged in the oven for an hour? It's tasty anyway and it's fucking cheap
