I will be doing Jacket Potatoes À la Badgers tonight....
4 good size potatoes baked in the oven
Bacon, mushrooms and onion fried up in a little olive oil and garlic
Take the potatoes out the oven and half them
Scoop out the fluffy insides and pop in a mixing bowl
Place the shells back in the oven
Mix the fluffy insides with a little tomato puree and grated cheese (Red Leicester and Cheddar)
Add the fried bacon, mushrooms and onion to the cheesy mix
Remove the (now crispy) shells and fill with the cheesy mix
There's only me and the little one for tea tonight so I've cooked a spag bol, we'll have a bit and the rest will go in the freezer for later in the week.
Something involving spinach, since one of the shops I frequent in Woolwich was selling two big bundles of nice fresh spinach for a quid. Curry, probably.
