Very nomnomnom. Do you have a recipe?
150g couscous

2 tbsp olive oil
1 garlic clove, crushed
140g mushrooms, sliced
140g halloumi, cubed
mixed fresh herbs (basil, oregano, parsley), chopped, plus extra, to garnish

Place couscous in a shallow dosh and pour over half a pint of boiling water. Cover with cling film and leave for 5 minutes. Meanwhile pour the antipasti into a small pan and heat gently for 3-4 minutes.
Heat one tablespoon of oil in a larger frying pan and fry the gralice for 1 minute. Add the mushrooms abd fry for 3-4 minutes until lightly golden. Set aside, add the remaining olive oil to the frying pan and fry the halloumi for 2 minutes until lightly golden.
Stir the antipasti and chopped herbs through the couscous and season. Spoon ont plates and top with the pan-fried halloumi and mushrooms. Garnish with the extra herbs and serve

Roast chicken, mashed potato and peas

And then tomorrow the leftover chicken will be made into a wakame and chicken ramen, Wagamama-style.

I had aloo tikka and spicy chick peas. Finally got the gram flour paste the right consistency so when I dipped the potato patties into it they were beautifully coated, stayed together and cooked through properly.
Love those little victories when you perfect a dish, and made double so we could have it again tonight.

Oooh, do give a recipe for the patties.
