Quarrot bake.

I was going to make shepherd's pie, but discovered that Tesco's had no veggie mince (other than their own bran, which I can't eat), so got quorn chicken peces instead. Getting home, I found out that we had far fewer potatoes than I'd thought. So the shepherd's pe was looking a lot less likely.

What I did have was lots of carrots. So I browned the quorn chicken pieces in a little butter, then put them in a casserole dish with some sweetcorn. I then soaked them in some vegetable stock, and drenched them with a mixture of oil, paprika, basil, salt and balsamic vinegar. Let that sit while I slced the carrots. Layered the carrots on top of the quorn, drizzled them with lots more of the mixture, baked for 40 minutes.

Very tasty with some mash on the side. :)
 
Oh, scifi, sounds rather nice. We may have to try that.

I sometimes do a sort of bean hotpot involving marinated tofu/quorn bits, mixed beans, tomato, paprika and other herbs fried up together, then stuck in the oven with cheese on top. Good 'emergency' dinner. The original recipe I had for this had bacon in it, but I've learned that marinated pseudo-meat usually does fine as a replacement strong flavour.

Very quick to cook too....

I fried a bit of onion (do it till it's as you like it), added some garam masala and half a handful of chopped fresh skinned tomatoes and fried until the spices were cooked out, added some creamed coconut (prob a quarter of a block or so) and a little water with a bit of veg stock powder and boiled it down a bit, then added a paste mix (loads of coriander stalks/garlic/ginger/lemon juice/more onion blitzed together), some chopped chilli, a handful of chickpeas, a couple of large handfulls of spinach, another half handful of chopped tomato and the haddock which I'd cut into inch-ish cubes and then cooked it on a high temp for 4 or 5 minutes.

You'll need to add more liquid (just add it if and when you reckon it needs it iykwim...to the consistency you desire!)...and I added a bit of double cream towards the end too, just cos I had some to use up.... ;) :D

You might want some salt too, depending on how much stock powder you use.

Stick it on top of rice, with lots of coriander leaf over the top.

Last night was the worst tea I've ever cooked :( It was proper miserable and so was I when I saw it. All my kitchen equipment speaks to me and I used my new pressure cooker for the first time last night. He is a grumpy old man and is gonna take some serious persuasion to get him to talk :( And the brussel sprouts are repeating on me something wicked today.

Tonight Flashy is doing curry tonight. On the plus side I did get 2 out of 3 wickedly good new shakes from the shakes I made on Saturday.
 
well i ate me home made spaghetti and meatballs for two nites in a row so tonite it will be take out. :D

i don't know exactly what yet....but i'll let y'all know

No idea. Need to go and do a food shop as we were lazy at the weekend :D

Had a mushroom, potato and spinach curry last night - the only veg we had in the house. it was horrid :( tasted really salty and i couldn't work out why, it's just occured to me it was probably the stock cube i put in :rolleyes:

i bloody hate making curry, it ALWAYS turns out wrong :mad:

that'll do it....those cubes are mostly salt :)
 
Either leftover pork and chorizo stew, or lamb kebabs with pitta and red cabbage salad. Depends on how I feel later.
 
If it ever stops raining I am going to have an big bag of chips with load sof salt and vinegar on in a big stotty, mmmmmm! Washed down with some pop: ginger beer or dr pepper methinks!

For some reason, my cooking always seems to run to three portions :confused: I always overcook anyway, but why three? Or is it just a cunning ruse to make sure I've got something for lunch the next day?

me too! there are only two of us in the house but without fail i cook for three. has confused me a lot, even when i try to cook for two i end up with a bit left over. hurrah for leftover lunches :)

the effort it takes to make 3 or 4 servings is not much more than for makeing 1 or 2 servings....in addition, one of the most embarassing culinary faux pas is running out of food :D
 
I always over cook, luckily alot of what I cook is able to be frozen. If it cant, we either have it for the next days lunch/tea, or my OH steals it for his lunch at work.

Tonight We will be having a beef stew, some will be frozen, and the rest will go into my OH's lunh box, as he works out in the bloomin cold, and there is nothing better in this weather than a nice stew. :)
