Very quick to cook too....
I fried a bit of onion (do it till it's as you like it), added some garam masala and half a handful of chopped fresh skinned tomatoes and fried until the spices were cooked out, added some creamed coconut (prob a quarter of a block or so) and a little water with a bit of veg stock powder and boiled it down a bit, then added a paste mix (loads of coriander stalks/garlic/ginger/lemon juice/more onion blitzed together), some chopped chilli, a handful of chickpeas, a couple of large handfulls of spinach, another half handful of chopped tomato and the haddock which I'd cut into inch-ish cubes and then cooked it on a high temp for 4 or 5 minutes.
You'll need to add more liquid (just add it if and when you reckon it needs it iykwim...to the consistency you desire!)...and I added a bit of double cream towards the end too, just cos I had some to use up....
You might want some salt too, depending on how much stock powder you use.
Stick it on top of rice, with lots of coriander leaf over the top.
