What are you baking?

^^^ soda bread.

Yeah. It's alright, tbh. Not massively convinced.

I've just put in some tuiles.

Because I've never made them, and because Artichoke claimed that a lack of tuile was the reason she didn't like my chocolate marquise :( (I bought a bloody electric whisk for that bloody marquise, after she said she wanted one when she saw it on NZ masterchef :D)

Artichoke brung back some raspberries, so I knocked up a 2nd batch of tuiles & some sweetened whipped cream.

Can't post a pic of the 2x10" tuile wafers, between which the raspberries & cream were sandwiched. But here's some remaining tuile:

And here's Artichoke licking the dregs of the cream bowl clean:

E2a: I'm on quite a sugar rush, tbh :D

I'll be attempting some cheesy cornbread muffins later this week - they seem quite easy and I think they might make a good meal base for Ziggy. Not had any luck with things involving yeast heretofore, but we'll see.

I made some disaster cakes last night
Frangipane muffins, some with lemon curd and some with blackcurrant jam.
It wasn't until I was putting them in the oven that I realised I'd forgotten to add the melted butter to the mix.
They look ok and they taste ok-ish. Probably more of a scone than a cake.
They'll still get eaten

Jesus.

Speaking of disasters, judging by what I can only presume after the aftershocks of soda bread, I'm unlikely to be baking that again in a hurry.

You must be related to me. Or there's some psychic nefarious anti-almond cake agenda floating about, because I made a Bakewell Tart last night and forgot to put the bloody ground almonds in. The almonds. Imagine.
I mean, come on!! It's a bloody Bakewell Tart, so how could I have possibly missed the walloping big pile of GROUND ALMONDS sat sitting all carefully weighed out in a dish on the counter, waiting for their moment to shine. Bugger me. What a daft bat.

Oddly, it wasn't entirely inedible. I edded it, anyway.

Tonight's tea, which may or may not turn out to be edible. FWIW there was a very healthy salad with those.

:D

All of my muffins still got eaten, several by me. I managed to convince myself that as I'd forgotten the butter they must count as low fat

BLOODY HELL.

I've made successful rye bread for the first time, ever.

There's a sprinkling of caraway seeds in it, too.

Note to self: don't bother with the breadmaker's cooking cycle, just get it to knock out the dough then bake it in a sensible-shaped loaf tin.

LUSH. Artichoke now has a choice of TODAY'S fresh-baked honey and spelt loaf; TODAY'S fresh-baked rye and caraway seed; or 4-day-old Sainsbury's malted multigrain flour.

I bet I can guess which one she has at breakfast tomorrow.

I've fallen for tuiles completely, btw. 5 mins prep, 5 mins cooking, virtually no washing up, STUNNING biccies every time

Cupcakes. Specifically, vegan 'lemon gem' cupcakes, using xylitol instead of sugar (for anyone thinking 'why the fuck would anyone do that to themselves?', i'm diabetic and most my housemates are vegan, so i'm trying to tick all our boxes). Half of them've got an ok-ish lemon icing glaze, the other half have got a date, cashew, raisin and lemon 'frosting', which i'm not sure about :hmm:

i'm really pleased they've worked - i've been finding trying to bake with sugar replacements really intimidating, not to mention pricey if it goes wrong. And i get to eat cake that's not quite as evil to my body as it could be :)

Just keep it away from pets eh tufty!

Those tuiles look lush quoady. Tomorrow I'm doing nigellas raspberry ganache cake and a first attempt at macaroons. Any tips?

Meringues for me tomorrow. My Mum loves my meringues and seeing as it's Mother's Day on Sunday, it would be rude not to make her a trayful.
I'm going to make lemon curd with the yolks. I might even whip a bit of that up with the cream for sticking the two halves of the meringues together.

Good idea - quite a bit of work to it, but not that expensive as a Mother's Day present.

I've nearly finished the Mario cake for the foal's party tomorrow. The earth is red rather than brown and the grass looks a bit anaemic but I hope he'll like it. Will post a pic in a bit

How old is the foal now trashy?

Macaroons were an epic fail. I dont think I had the right consistency before baking and they went completely flat and squishy. bastard things
