What are you baking?

Banana bread, with walnuts and sultanas and poppy seeds. It's really nice with a bit of salted butter spread on it.

Got a mate coming tomorrow so i was thinking of making more challah tonight. Either that or going to the tenants' union meeting. I've got to go to the gym as well, was going to do that last night but ended up at the pub :D
 
today, i'm making cornish pasties, i've got a small mountain of pastry sitting in the fridge that took almost no time to make, cause i used the food mixer and the child slaves have done most of the prep of the filllings. plan is to have some for supper, then do a load to stick in the freezer
 
Yeah I've got an oven but you wouldn't believe the hours he spent trying to bake cakes or biscuits with barely edible results.
And let's not even talk about bread :( I've even had a personal tutorial from a master(ish) bread baker and can't et it right.

I'll give them a go though. Or pass the recipes on to ShiftyJunior so he can make cakes for me, I think that is the way forward :cool:

Made a raspberry & chocolate fudge cake yesterday. It's mixed using a wooden spoon and a saucepan and is a doddle to make.
The only problem is that you're meant to leave it for 24 hours so it get really moist & gooey and squidgy.
Had a slice this afternoon (warmed in the microwave for 20 seconds) with fresh raspberries & squirty cream.

I just went from 6 o'clock to midnight :oops::D. I was planning cranberry, white chocolate and macadamia Blondies to go with a roast lamb dinner for tomorrow. Easter seems a worthwhile excuse to make an effort :)
 
Cupcakes. Specifically, vegan 'lemon gem' cupcakes, using xylitol instead of sugar (for anyone thinking 'why the fuck would anyone do that to themselves?', i'm diabetic and most my housemates are vegan, so i'm trying to tick all our boxes). Half of them've got an ok-ish lemon icing glaze, the other half have got a date, cashew, raisin and lemon 'frosting', which i'm not sure about :hmm:

i'm really pleased they've worked - i've been finding trying to bake with sugar replacements really intimidating, not to mention pricey if it goes wrong. And i get to eat cake that's not quite as evil to my body as it could be :)

I find I can make sick lemon cakes with xylitol but I can't get the topping to work at all. I tried to make "lemon drizzle" but ended up adding some corn flour to make it gloopy enough and it turned into something like congealed PVA glue.

So can you remember what you did to get lemon icing?
