What makes it a "Franken..." ? Or is it just a Lamington baked for Halloween revelry? (Which is fine!)

You can tell I haven't had my tea yet, am being a food/recipe pest on multiple threads tonight :D
 
Got a new sourdough starter on the go. Just 1 day into a 3 day prove and already the dough is like chewy on a slipper :D

It's the blimmin state of them that makes them Franken-

They took ages, they disintegrated when I tried to dunk them in the chocolate icing and I had my other half who is from NZ telling me the correct way to make them (which wasn't what I was doing) :mad: :D :rolleyes:

They tasted nice though...jam and cream in the middle.
 

Despite not being deep-fried, these bhajis are surprisingly tasty and are both healthier and totally vegan. I've taken them to several parties and they all disappear very quickly - with even confirmed omnivores scoffing the down like there's no tomorrow. :)

Ingredients

3 large onions (chopped "thin and stringy")
1 tsp dried chilli powder (or half a dozen fresh chillies - chopped)
4 Tbsp Gram Flour
2 tsp ground coriander seed
1 tsp ground cumin seed
1 tbsp Nigella (Black Onion) seed
Handful of fresh coriander (finely chopped)
1 heaped tsp Turmeric
1 Tbsp Tomato Puree
1 tsp sea salt
1 Tbsp Ginger paste (or finely chopped fresh ginger)
2 Tbsp Lemon juice
2-3 tbsp water

Method

1) Fry onions in 3 tbsp veg oil until transluscent (6-10 minutes)
2) Put all other ingredients in a bowl and mix together (adding water as required to achieve a sticky consistency)
3) Add the fried onions to the mixture and mix thoroughly
4) Leave in the fridge for 30 mins
5) Preheat the oven to 200C
6) Take 2 baking trays cover with greaseproof paper.
7) Place a tbsp of veg oil on each tray and spread across the greaseproof paper on each tray with a spatula.
8) Place heaped tsps of the bhaji mixture on to the prepared baking trays.
9) Bake in oven for 15-20 mins checking after 15 mins. When the tops of the bhajis are starting to char then that's the sign to take them out.
 
So my starter is taking too long to wake up and I don't think it'll bubble up before tomorrow :facepalm:

This is a basic one, but I always added a little olive oil into it, and I also preferred slightly higher hydration too, but this is a good starting point.

 
Not exactly baking, but here's the start of 2023's marmalade making...
