Here's the Mushroom and Chestnut Wellington I made on Christmas day.

I made a batch of mint truffles for a Christmas party. I was particularly impressed with this one as it looked a little like a bomb. The white truffle filling started to squeeze through a hole in the dark chocolate at it warmed up. I froze the fresh mint and rum truffle centre so the melted dark chocolate set better after dipping it.
