Also good to know about the point only availability as I’d always put off doing a brisket because of the size.
 
Sat in front of a PC today I didn't even get my full 30 min lunch, despite it being gorgeous. Resolved to have a BBQ at theat point. Also big meeting this afternoon I've been dreading for weeks, so to finish and run out to buy beer and meat was a wonderful sense of relief. All from Aldis BBQ section. The sausages are something else, but the pre marinade lamb and beef did the job.

That looks like a Weber we used to have one of that model save ours was red in colour but we had to replace it with a gas one owing to Mrs Q's tendency to adopt every stray that showed up looking hungry.
 
About the fire up the Weber for the first time this year. Pork, lamb, steak and sausages. :cool:

Remembered I want some flat kebab sticks for making Turkish style minced kebabs. Slightly horrified by the price on Amazon, I went over to AliExpress. They've got a kebab press for £2.24, figured it's got to be worth a go and it meant I spent enough to get free shipping, so it really only cost me 25p. :D

Looks great, love to see some pics when you fire it up.

I have a mini version of that but it's a Homebase rotisserie, you should add a rotisserie attachment next. :D

I just realised I dropped a bollock. In my haste to finish it I forgot to add bits at the sides for the plates. Another job.
 
I know you've probably worked it out using maths and shit but do you think the grate has enough holes for airflow? That would be my only question.

It looks fucking great btw, I want one.

I only guessed as to the size and quantity of the holes, but I did a test run a few days ago to check if the bottom vents were sufficiently large, and it was fine.
I have a couple of big bags of charcoal here, and a load of sirloin steaks, so weather permitting, I'll know how well it works this week.

I guess the main thing is if there aren't enough holes you can always make more but if there are too many it's a PITA to close them up again.

I was going to make smaller holes but more of them, then I realised how many holes I'd have to drill, and changed my mind :D
 
Don't forget you don't have to have the whole thing blazing, you can do half and half for temp control. Cook with lid closed off the heat, finish on the direct heat.

Try reverse sear if you can get decent consistent temps.

Yeah, that was the idea with the adjustable air inlets. I'm hoping it'll be controllable enough. :thumbs:
 
I was eating left over burnt ends on father's day so saved a lidl tomahawk as a nice dinner before going away on work this week.

Reverse seared on the smoker then finished on the Weber go anywhere.

Triple cooked chips, beer battered onion rings, grilled toms and peppercorn sauce to accompany...1000086829.jpg
 
I got myself this for the pizza function but it also works as a smoker

I'm now really interested to see if it is any good at smoking.

It's plate size is 30cm by 30cm so I'm not going to be doing giant briskets but I should manage something reasonably sized.

The spatchcock chicken idea sounds like a good start.

Aren't they just designed to get really fucking hot?
 
Next weekend I'm off work for the summer. Might invite a few friends over and do a smoked dish during the day they go into pizza mode for the evening.

I was a little dubious about multi function cookers but their air fryer is great so I'm hoping this one does the job too.

You could probably do an awesome tandoori chicken.
