That looks like a Weber we used to have one of that model save ours was red in colour but we had to replace it with a gas one owing to Mrs Q's tendency to adopt every stray that showed up looking hungry.Sat in front of a PC today I didn't even get my full 30 min lunch, despite it being gorgeous. Resolved to have a BBQ at theat point. Also big meeting this afternoon I've been dreading for weeks, so to finish and run out to buy beer and meat was a wonderful sense of relief. All from Aldis BBQ section. The sausages are something else, but the pre marinade lamb and beef did the job.

Remembered I want some flat kebab sticks for making Turkish style minced kebabs. Slightly horrified by the price on Amazon, I went over to AliExpress. They've got a kebab press for £2.24, figured it's got to be worth a go and it meant I spent enough to get free shipping, so it really only cost me 25p.

I have a couple of big bags of charcoal here, and a load of sirloin steaks, so weather permitting, I'll know how well it works this week.
Exactly...I guess the main thing is if there aren't enough holes you can always make more but if there are too many it's a PITA to close them up again.
The main enclosure is 2mm. The tray for the coals, and everything else is 3mm, and 6mm bars for the grill.What thickness steel do you use?

Yeah, that was the idea with the adjustable air inlets. I'm hoping it'll be controllable enough.Don't forget you don't have to have the whole thing blazing, you can do half and half for temp control. Cook with lid closed off the heat, finish on the direct heat.
Try reverse sear if you can get decent consistent temps.

It's plate size is 30cm by 30cm so I'm not going to be doing giant briskets but I should manage something reasonably sized.
The spatchcock chicken idea sounds like a good start.
Normal pizza ovens yes i think so. This one has full temperature control that goes down as low as 40c. It can work as a dehydrater at that kind of temp. Maybe some smoked jerkyAren't they just designed to get really fucking hot?
