What's for tea tonight? (pt4)

Fajitas last night were lush... not sure about tonight - never got much of an appetite after college. Maybe some couscous :confused:
 
Hmm, tonight I might make some kind of stir fry with celery, mushroom, carrot, and cashew nut. Had it the other day in a restaurant and it was super yum and it really can't be that difficult.
Failing that, some kind of beef/black bean style thingy.
 
Tonight will be a chicken stuffed with cheese thing from the freezer, served with new potatoes and savoy cabbage. A lazy dinner, after a very long day at work.

I haven't actually made this yet, but have made quite a few of his other recipes which have been fab.

Kale colcannon

To make the colcannon, cook the kale in a large saucepan of boiling water for 5 minutes. Drain well, chop finely and set aside.

Put the butter in a frying pan over medium heat. Add the bacon and cook for 5 minutes, stirring occasionally until the bacon turns golden. Add the spring onions and cook for a further 2 minutes. Stir in the kale and remove the pan from the heat.

Put the potatoes in a large saucepan and cover with cold water. Bring to the boil and cook for 20 minutes, until soft when pierced with a skewer but not breaking apart. Drain the potatoes well and return them to the pan. Add the butter and mash well. Beat with a wooden spoon until smooth. Stir the kale mixture into the potatoes.
 
Last night was grilled chicken marinated with harissa and yogurt, served with peppers and courgettes fried up with some garlic oil and preserved lemons, rice and a blob of yogurt on the side.

Tonight is a cop-out of some fancy "fresh" ready-meals I picked up for 50p in the supermarket yesterday - herb meatballs and spaghetti with some veg.

Going on holiday at the weekend so got to work on emptying the fridge over the next few days.
 
You can have a tin of beans and count yourself lucky. :mad: :p




Beef bourgignon (argh - no fucking idea of the spelling) with steamed savoy cabbage and broccoli and homemade garlic bread (made with smoked garlic - which might be yuck or might not - but there's only one way to find out :D )

A TIN??? I want one of those really convenient portions of beans with a rip off lid that I can put in a microwave THANKYOUVERYMUCH. I seeeeen it on da telly last night (in a very bad scouse accent) :cool:

That sounds amazing, and I don't even like chicken :)

Last night's tea turned out to be a good one after all: hot bread rolls with stuff (chickpea pate, hummus, stuffed olives, stuffed peppers, salad). A tea of convenience, but tasty with it.

Not sure what to have tonight - Mr K bought lots of nice and easy stuff from the Co-op, so probably fresh pasta and salad or something.
 
well last nite we had take out thai. tonite she's going to make something....I think she said chicken pasta or chicken rice :confused: i can't remember cause i was half asleep :D

Anything with harissa is a very good thing :cool:

I've got a load of leftover veggies and rice which will be tomorrow's lunch, with the addition of plenty of harissa, yum.
 
Im making pasta with homemade sauce and spinach and a homemade veg soup with leeks, onion,carrot and parsnip.

Well I'm gonna give it a go cos I spent a nice couple of hours last night, surrounde by recipe books, planning a whole month's food. That's 30 different dishes. So I went and spent about £130 on food today. Had to clear a new shelf for it. Tonight is smoked haddock with flageolet beans and mustard with spinach.
 
Cor! I can usually manage no more than a week's planning at a time! That's HARDCORE!!

I'm having pasta with bacon, peas, parmesan and cream tonight. Simple but satisfying....
 
Not sure at the moment. It's looking like leftover spag bol or home made fish and chips. :confused:

ETA: When I say home made I actually mean out of the freezer.

I like your style! Wish I was that organised, I'm always claiming I'm going to plan meals in advance but rarely manage to do so. As evidenced by tonight's tea, pizza and salad :D
 
Pizza was underwhelming so I had some cream crackers with peanut butter, mmmm. Now going to eat a lemon cheesecake, MMMMMMMMMM!
