Take a wrap and heat it a little on a hot griddle on one side.
Spread a thin layer of humous in a circle on the heated side (not all the way to the edges) then make a rectangle of filling with some grated carrot, a chooped tomato, five or six chopped black olives, a couple of slices of cucumber, chopped into smaller bits, a tablespoon of sweetcorn and three or four thick slices of halloumi which you've fried until they're brown.
Then the fiddly bit....fold the two shorter sides in, then roll it up (kind of like making an envelope iyswim?) then put it back on the griddle, making the cross pattern on first one side then the other (so rotating it once on each side - get me? ), then slice in half and eat.
They are ABSOLUTELY DELICIOUS - I've been living on them for breakfasts/lunches for the last couple of weeks.
