What's for tea tonight? (#8)

That recipe is terrifying. I was intrigued to see how you'd get around the oxymoron of vegan cheesy peas tbh, but this alternative including maple syrup, sweet potato, cajun seasoning and cider vinegar sounds frankly bonkers. That's before you start sprinkling on the recommended garlic and onion powders, mustards, evo (?) and yeast flakes. It sounds like cheesy pasta re-engineered by particularly unprincipled renegades from the pot noodle factory.
ha! if that scared you, you ought to try the more elaborate version I'm having for tonights tea

Fake Cheese Sauce
3/4 cup nutritional yeast flakes
1 can cannellini beans, drained (about 1 1/2 cups)
2-3 Tbsp tamari (replaces added salt)
1 tsp garlic powder
1 1/2 Tbsp mustard powder
1 Tbsp Dijon mustard
1/4 tsp fine pepper
1 cup mashed sweet potato
1/4 cup extra virgin olive oil
1/4 cup vegan marg
1-2 Tbsp maple syrup
2 Tbsp tahini
all of the above blended together.
I'm using it to make nachos
 
pasta with flaked mackarel, beetroot, olives and tomatoes and herbs from the garden. Yum. Dessert will be crumpets.
 
I'm at work and still on the ready meals.I have a large quorn cottage pie and some veggies. I will add tabasco sauce all over.
 
My boy is off sick with a painful chest/probable viral infection thing and I have fuckloads of tomatoes from the garden, so am making bouillabase for me and him, cos he loves it and since I've had both of them during the holidays, with no nights with just one of them, he's not had the chance to have any fish for ages.
As it happens, I do have my daughter tonight too, so she's getting beans on toast. :p
 
No cider :facepalm:

I think it'll be good ole sausage and mash :)

Oh sheo, you would've been proud of the meals I had last week... lush and huge, and puds and cream and all sorts of deliciousness :D
 
Leftovers from a STONKING econodrive veggie soup/stew yesterday, made up of:

Freezer-foraged quorn chicken
Red onion
Carrots
Celery
Fridge-foraged just-about-to-go-off baby corn and green beans
Garlic
Courgette from the yard :cool:
Fridge-foraged spuds
Freezer-foraged half tin of chickpeas
Several handfuls of that dinky little farfalline pasta
Tin of tomatoes
Smidge of tomato puree
Fresh thyme and rosemary
Basil and oregano
Good veg stock
Parmesan rind in the pot
Grated parmesan over the lot once int bowl

Fuck me it was soooooo good :cool: Kinda turned into a stew by the time I'd thrown in too much pasta, but that was fine! Have put some extra Marigold stock in so tonight it will be soup :D

It was one of those meals that just developed itself due to having no money and bits and bobs of leftover stuff - all I had in mind was some kind of minestrone. We loved it so much though that it's now going to be a winter staple. Don't even need bread with it!
