What's for tea tonight? (#8)

Pasta bake - garlic, chilli, yellow pepper, chorizo, green & black olives.

Flipping lush even if I do say so myself.
 
Corned beef hash. Except I went a bit wrong in the head and for some reason forgot that I usually make it with cubed potatoes and made it with mash instead. Which resulted in what can only be described as a fried meaty mash. It was ok though. We had it with beans.
 
I was working to a simple recipe from Dave DeWitt's nerdily super comprehensive chilli-bible ('The Complete Chil(l)i Pepper Book') for louisiana hot sauce. It's basically a pound of hot peppers, roughly chopped and mixed with 2 US cups (1 cup = 240ml/1/2 pint roughly) of vinegar, 2 teaspoons (non iodized) salt. Heat the mixture and bring to gentle simmer for 5 mins, then puree in a blender. Refrigerate for 2 weeks, then strain into sterilised bottles. Then use as appropriate, keeping in the fridge.

I'm using cayennes mainly, so it shouldn't be a huge stretch away from the Tabasco peppers used by a certain brand. Don't know too much about Pyramid peppers, but a quick google suggests that they're an ornamental style pepper with little pointed chillis not unlike Numex Twilights/Firecrackers etc. They could well be pretty enough to pickle and use that way, instead of a sauce - I'm planning to do much the same with my crops of ornamentals in the nearish future. And then I've got to find a way of using the habaneros, trini scorpions, 7 pots and nagas in some kind of vaguely palatable, nuclear hot sauce

Cheers tarranau, we've already pickled quite a few in with the shallots we did a couple of weeks ago - they definitely do look very pretty.
I fancy making some sauce too and your recipe looks like a good place to start.
 
Think my son's friend is coming for dinner although I'm not sure till they turn up (cos they've only had four days to sort it out :rolleyes: ). If so, we're having southern fried chicken burgers, from the freezer, in baps with mayo and shredded lettuce and some chips, if not, we'll have veg burgers and I'll save the chicken ones for when he comes next week. :D

Got an over ripe banana to use up so will probably do ice cream milkshakes with that for pudding.

I am really enjoying the fact that you have a chilli bible, btw, t! :D :cool:
 
All in one Sausage Pot - sausages, beetroot, and potatoes all roasted together. Sounds nice but I think it may be small i.e. what it really should be but it always looks too small, portions!
 
Ive got lettuce and tomatoes to eat up, but i dont know what to have with it...... Need to get something on the way home.

I've already had quiche this week, so need suggestions.

In answer to your question then, get a nice steak, some rocket, a ciabatta and some mushrooms. Then make yourself a massive steak sandwich including your lettuce and tomato :)
