They do boiled potatoes with olive oil and coriander here rather than butter. I’m on a low cholesterol diet at the mo so butter is not on the menu .I'd do both the spuds and peas with mint, that with the parsley sauce is more than enough herbiage.
(But then I am one of those genetic oddballs to whom coriander leaf tastes of soap, so I'd skip that bit anyway )

I should have some new potatoes from my veg garden in a month so looking forward to them .Probably the wrong time of year for it, but I do love boiled new potatoes - all little and in their skins - with some mint leaves in the cooking water - one of my favourite things that I don't really get to do because OH doesn't like mint
Olive oil and garlic is also good on crushed new potatoes.
Why have I only got big baking spuds in at the moment? I want some boiled new potatoes now

Yup. I stumbled across veg growing thirty years ago and am addicted to it . Seasons are very different and some of our traditional veg ( U.K.) just doesn’t do well due to the heat and lack of cold and rain . On the other hand I have grown aubergines outdoors here , melons , watermelons and mangoes and have loquat , lemon and orange trees .Fantastic, stuff you grow yourself has that added satisfaction of "I did this" too, at least IMO.

it varies depending on what veg I've got in - tonight there was an onion, a carrot, a stick of celery, a courgette and a potato - diced and added to the pot in that order, with some chopped garlic. 1.5 litres of chicken stock and a drained tin of beans, simmered until the potato was just soft then added two big leaves of kale, shredded, then some frozen peas shortly before serving. I cooked some rice in a separate pan and served it with a spoonful of rice and a handful of parmesan for each bowl.Recipe would be appreciated please!

Duck breasts for me and the boy, prolly something packed with chilli, ginger and garlic for himself as he is poorly. I am happy to just have it with brown egg fried veggie rice with mine. Smallest has asked for mashed potato pizza which even I feel is a step too far for carbs. So will negotiate for one or tother.
Didn't happen. Himself isn't well enough for Duck so going to slow cook the duck legs () tomorrow, shred and make duck tortillas for Tuesday. So ended up making him eggs in spicy tomato and chorizo sauce with bread. The small one has been sick so nothing for her, I haven't got a huge appetite either but have cooked some buffalo chicken thighs and veggie rice for when I finally fancy it. Though at this rate I can see it being jam on toast kinda evening.
