What's for tea tonight? (#8)

Bean and mushroom tacos (soft tortillas, not crunchy unmanageable Satan crackers), laden with cheese, chipotle mayo, and shredded iceberg dressed with fresh lime juice. Extra salad/lime juice on the side. Nom!

Had a mahoosive cupcake earlier, so I suppose I'd best tone down pudding tonight. Just the 4 or 5 dark choc digestives then.

Very amused by "Satan crackers" :D 🤣
 
Fajitas! Those El Paso kits were on offer when I was in Lidl so thought I'd get one for a change as we don't often do them at home. Will be chicken with peppers and onions and we'll have Mexican rice on the side.
I prefer the Discovery brand.

That said I stock up on the Discovery Fajita spice and get the supermarkets own brand tortillas rather than buy kits.
 
Wednesday night I remembered I had a pack of slices of ham that needed to be finished before I cracked on with the pork loin steaks, so I had ham & mustard sarnies again for tea in a repeat from lunch.

So Thursday night I had the pork loin steak with some pasta - penne, peas, chilli flakes, red pepper, onion, garlic, herbs, white wine, parmesan - that I was considering on Wednesday.

It was very nice, I have some of the pasta left over for tomorrow too, although if OH decides he wants to eat it before I get to it that is also fine, he has less time to make food than I do. I have a pork loin steak left over too (pack of 2, only cooked one tonight - bloody nice at 55p each too, decent thickness) but I put that in the freezer for another time.

Chicken sandwich for me as I am working till 9. Himself has pork and potato casserole with Crusty bread, small one is having chippy tea with Nanny and Ganny (jealous face).
 
OH scoffed the leftover pasta with some cheese on top before going to work, and I have to go shopping so I shall see what the reduced to clear shelf has to offer.

If nothing comes of that, I'll make chilli - quorn/bean chilli for OH (for him to have in the mornings), beef for me, will make enough to do us for a couple of days.
