What's for tea tonight? (#8)

Am fancying roast peppers/red onion/courgette/cherry tomatoes/garlic, lathered in grated goat cheese then back in the oven to melt, with pesto fusilli, black olives and salad.

Last of the lush Tesco choccy cake with blueberries, then a mint tea.
 
I have a ham sandwich as I don't fancy much else tbh. Himself has the last of the Christmas turkey, which I am making into a turkey and cauliflower Madras with basmati rice. Small one is having mashed potatoes, peas, carrots and some batterless chicken nuggets.
 
Works really really well, you don't need to stir it constantly, just add all the stock in one go then stir every so often to make sure it's not sticking - otherwise treat it much the same.

I love an orzotto, in fact I probably prefer them a bit to risottos (although it's close). I usually do a mushroom one for me and OH or sometimes do a chicken and bacon one for myself when I have leftover roast chicken to use up, lush.
We really enjoyed it and it is a lot easier than the proper rice version. Brilliant in fact!

I fancied one myself after reading what you were having yesterday, so similar is planned for either tonight or a bit later in the week (depends upon what the reduced to clear shelf has to offer tonight, if we get some bargains that need to be used we'll be having orzotto in a day or two)
 
I made an unexpectedly fiery chilli with some meatless farm mince. me & babies all panting and downing large glasses of water
What spice/s did you use? I have a pack of inedible habanero chilli powder. 2 tsp is headblowing heat. Tried just using half a tsp but it's still too fierce to eat!
 
Ended up having mushroom risotto (OH preferred that idea to orzotto and he has a couple of nights off so I wasn't trying to produce dinner in a rush, I like both so neither here nor there to me).

Also had some yellow-stickered garlic bread which wasn't that good, but the real bargain was a really fancy ball of buffalo mozzarella reduced to 50p, which we had as a side salad with tomatoes, black olives, and olive oil. I bloody love mozzarella and although we are in for a tough couple of weeks (OH didn't get his full pay due to being off 10 days with Covid :mad: fucking fuckers, he bloody caught it there ffs :mad: ) I could not pass up a nice one with a yellow sticker on it.
 
We were going to have blackened salmon with tomato and pepper rice, but OH has been asked if he could work tonight (1 bad back and half of the rest of the shift off with Covid still) and as he had yesterday night off has said yes cos we are skint and a bit of overtime is very welcome (shouldn't have to fucking live like this but it is what it is).

Fortunately I hadn't got the salmon out of the freezer yet, will save that meal for his next night off instead.

So now he is going to have one of the large sized Bombay Bad Boy pot noodles after a couple of hours emergency kip before he heads off to work. I'll stick a couple of big spuds in the oven at 6am tomorrow so he can have jacket spuds with beans and cheese (one of his favourite meals) when he gets home in the morning.

I'm going to have a pork loin steak with pea and pepper pasta - possibly orzo but I also have a bag of gigli that I haven't tried yet so that might be fun as a vegetable & pasta side dish.

Bean and mushroom tacos (soft tortillas, not crunchy unmanageable Satan crackers), laden with cheese, chipotle mayo, and shredded iceberg dressed with fresh lime juice. Extra salad/lime juice on the side. Nom!

Had a mahoosive cupcake earlier, so I suppose I'd best tone down pudding tonight. Just the 4 or 5 dark choc digestives then.
