What's for tea tonight? (#8)

Clearing the freezer for Christmas so it was breaded fish, curly fries and peas.


Son said it was the best dinner in ages. :mad::D

OH is like that, I cook all sorts of lovely meals but it's always fairly clear that the meal that excites him most is fish fingers, beans and chips - I shouldn't let it irk me, but on some deep level it does!!!

My tea tonight is baked potatoes with butter and cheese and some salad (tomato, cucumber, olives, onion, round lettuce with a Greek style dressing (olive oil, red wine vinegar, garlic, mustard, oregano, seasoning)

Am also making tuna salad (tinned tuna, mayonnaise, garlic, green pepper, spring onions, sweetcorn) for OH to have with his baked spuds in the morning and for sarnies over the next couple of days, will probably have a bit of that too.
 
I'm trying my hand at this "less meat" thing, I want to be able to at least cook something nice if I ever have vegetarians or vegans around for dinner. To that end, I have made tonight's dinner by gently frying some onions and garlic in olive oil, then adding finely chopped red and yellow peppers, cooking those for a bit before adding in a jar of Butter Chicken sauce and some cubed smoked tofu.

The results aren't bad, which makes a big change from the awful inedible mess that usually results when I try to innovate in the kitchen. A bit bland, though. I think if I were to make it again I would use two jars of Butter Chicken sauce.

I don't think my flatmate was too keen on it, though.

If you like peppers and want a veggie dish, pepperonata is really good flavourful dish that is easy to make, serve with pasta/rice/spuds or just in a bowl with some crusty bread to mop up the sauce.


Edited because I found a recipe that is closer to the way I make it, I'd cut the peppers in bigger chunks though rather than slicing them.

And I had triple chocolate ice cream for afters. I don't normally do afters, but I bought ice cream the other day (2 tubs for £3 from Iceland, got 1 triple chocolate and 1 caramel) and quite fancied some.

I can really recommend this lentil lasagne recipe as not just ”ok” but actually more tasty than a meat version IMHO. Like any lasagne there’s a bit of prep to it, but use fresh carrots and the flavour is really great 👍

That‘s the recipe I use when I’m having a veggie day. I’m sure it could be made vegan too with a suitable substitute for the creme fraische.
 
I think it’s gonna be spag bol, if I can find a frozen portion of bolognese sauce in the freezer. Mrs C has tooth trouble so needs something which is easy to chew.
 
Fucking hell mate, that's most of the food groups gone :(

I do jest btw, OH was veggie since his early teens and I was veggie for 20 years - these days he eats a little bit of fish or seafood and I eat a little bit of fish or meat occasionally - but we're mostly plant-based in terms of diet (him 95% and me around 80%). Good luck Badgers with cutting down a bit on certain products - if you want any inspiration Urban is a really good resource for recipes and meal ideas for any sort of dietary requirement :)

I've been wanting a Double Big Mac for a few weeks while that offer is on (until the 19th), we have agreed that tonight (OH has the night off) we will be getting burgers from McDonalds (yes although I love cooking I sometimes say fuck it and go full on fast food - sue me)

I am planning on a Double Big Mac, a cheeseburger, large fries
OH will probably order 3 fillet 'o' fish and large fries and one of those apple pie things with a filling like napalm.

Can't fucking wait!
