What's for tea tonight? (#8)

Picked up a half price fancy roasting chicken from M&S yesterday, I think someone massively over-estimated the demand for Easter food as there was a whole shelf of them. Shame they're not suitable for freezing, I'd have picked up another couple.
So that, with roast potatoes and steamed veg.

I am making vegan chicken and cashewnuts, using chicken type stuff from the vegetarian butcher, marinated in rice wine soya sauce, garlic powder, miso and will be stir fried with oyster mushrooms, onions and brocoli, grilled cashew nuts and will be had with brown rice. (I really want white rice but could not be arsed to go to the shop).
 
OH is on doughnut night shift again (picked up the shift 15 minutes before he had to leave to get there on time, so short notice).

Will probably have a ready meal from the freezer - I pick up ready meals from the reduced to clear shelf and freeze them for just such an occurrence, so will probably have Morrison's Cumberland Pie (which I will have originally bought for 20-60p depending upon use by date and frozen) a bit later.

Lotus Biscoff Doughnut for afters (I was dubious but they are fantastic).
 
I think I'm going to put the oven on and grab a ready meal out of the freezer, I've been jabbed and still have an appetite atm but may not later so I think I should eat now just in case.

EDIT: Morrison's Cumberland Pie again (how many of these did I buy exactly? No wonder there's no room for anything else in the freezer, I keep finding these in every drawer of the thing. They were a bargain mind you.)

Yeah I am going to see if I can clear a space to get to the air fryer (the doors on one of the big cabinets are borked - hinges have come off partly - so stuff from the cupboards that we need to get to regularly is currently all over the kitchen workspace - going to take the doors off when we both have some time at home just so we can use the cupboard. Normally my dad would have popped round with his router and cut new insets in the doors and cabinet so we could move the hinges, but COVID etc)
 
I'm really glad we got that air fryer, I was dubious at first. I only ever use it to do chips mind you* (either home made fries or the plain bags of frozen steak cut ones from Morrisons that are intended to be fried) but I really don't feel guilty about eating chips and they are pretty good too.

*EDIT: Except the weaponised kale incident, that put me off trying to be too experimental. The internet told me to do it!!!
