What's for tea tonight? (#8)

Chicken, bacon, and mushroom casserole with a baked potato.

(How long does cooked chicken keep safely in the fridge btw? Due to lack of choice I ended up with a larger one than usual!)

I’d generally be happy up to 5 days after cooking so long as it smells ok but ymmv.

Slightly random assemblage of sausages, some form of potatoes, Jerusalem artichokes and salad here.

Cool, thanks - I have some celery and onion and random bits of veg so I might just make some soup with the carcass and any leftover meat tonight and freeze it if I can find room in the freezer- I assume that is safe enough? (This is the sort of thing where it becomes obvious that I was veggie for 20+ years!)

how is it possible to get into a position where one has too many sausages? :hmm:

I mean technically there's no such thing as too many, but last time I was in Morrison's they had loads of sausages on the reduced to clear shelf - packs of 8 reduced from £2 to 50p a pack, freezable, so I bought a whole load of the things. And I am the only one that eats pork - that is quite a lot of sausage in the freezer now :D I think sausage casserole will be in my near future :D
 
There are two I do regularly - one with onions, celery, carrots and cider (maybe some mushrooms if I have any), and a more tomatoey one with tinned toms, roasted peppers, onions, garlic and red wine - various herbs as well of course. The former I like best with mustard mash, the latter is good with rice :)
 
We are on freezer meals. Mixture of home cooked & ready meals I want to run the freezer down before I shop properly again.

Saturday; meatless meatballs in tomato sauce & pasta. Meatballs ones my mate makes from banana skins.

Sunday: probably quorn roast, streamed broc & other veg plus potato cakes made by mate that look substantial -they look nothing like a potato scone. I did want to do with salad but we don’t have enough.

Monday: have pre-ordered delivery of spanakopita, Greek potatoes & sticky toffee pudding. Likely use last of the salad.
