What goes well with corned beef in a sandwich?

Google is weak on this question. Brings you to all these new York deli type recipes which seem to have a strange idea of what constitutes corned beef. But for the record, sauerkraut, mustard and dill pickles are not what I'm thinking.

Just something so that it's not just corned beef between two slices of bread. What do you reckon?

Nothing beats a proper (Welsh) corned beef pie / pasty - Cardiff market sells the lush ones. With chips and baked beans.

I am off to NYC in September , and am going to indulge in the corned beef hash / poached egg / home potatoes breakfast as often as I can. Food of the Gods , and much underated.
 
Corned beef hash or corned beef and potato pie are fucking great. Might have to make that this week as I have a few cans in the cupboard.

Really like corned beef but rarely have it as a sandwich filler.

Always got a few tins in the cupboard , bit of a guilty treat really. (Along with - shamefully - Tyne Brand Minced beef) , staple when / where we grew up. A quick dinner.

I went for two slices of corned beef per sarnie, with a sprinkling of grated cheese and a liberal squirt of chipotle mayo. I have had a quarter of one sandwich, and I can confirm that it was good.

Will pick up some red onion and try that with some branstons, later in the week.

I'm doing packed lunches for my new job, btw. I've traditionally spent stupid dollars on buying sandwiches from Gregg's of Pret or whatever, but need to save money. Got some pastrami for later in the week, also. The trick with pastrami sandwiches is loads of slices - the entire pack for a couple of sandwiches, I'd say. Only viable on Aldi pastrami price though.

Salt beef NYC style for sandwiches , yes - with pickles etc , on rye bread. Katz on the Lower East Side and the now gone Carnegie on 57th Street.

Breakfast corned beef hash , is akin to ours , (presumably out of a tin !) - a diner stalwart dish.
