What are you having for breakfast?

Do you happen to have a decent recipe for vegetarian sausage ‘meat’? I really miss sausage rolls and would love to make myself a batch… :)
I have two difficulties on that account.
  1. This has been an Experiment. In getting a nice recipe, and achieving a consistency suitable for sausages. Hence the "patty" thing - I can't seem to get it to the right consistency to make it fill sausage skins properly.
  2. Because it's been an Experiment, I can't now remember what the recipe was. It involves spinach, green lentils, walnuts, a bit of textured vegetable protein (in an attempt to get the consistency right), onions, and probably some bits of seasoning I've forgotten - it's languished in the freezer for a few months while I summoned up the will to have another go.
Once I've nailed it, be sure that I'll post the recipe! :)

Look forward to it! I will go searching for recipes online in the meantime. The Greggs vegan sausage roll is decent enough, but doesn’t quite cut it for me. Something homemade with earthy lentils and a bit of mustard would be perfect.

Also missing Scotch eggs terribly! Plant-based sausage meat is my food holy grail atm 😆

Yeah I look forward to that too! Would love to try some home-made ones occasionally.
And yes as Skim says, any good veggie sausage recipe may well work for veggie scotch eggs too, which would be brilliant!

Saturday morning, I am going to have 2 scrambled eggs on white buttered toast with loads of salt and pepper, followed by two Weetabix in dairy milk with sugar, accompanied by a decaff coffee with milk but no sugar. I might follow that with some fruit but all I have at the moment is some small oranges and plumbs that don't want to ripen so probably it will be the oranges.
 
I made a blackberry and apple oat bake last night, from a BBC recipe. It's flavoured with cardamom and cinnamon sticks, and I thought it'd be lovely but it's not that great. However, given all the ingredients in it, I'm not gonna waste it, so had some of that this morning, with a splash of oat milk and maple syrup. Very filling!
 
In the absence of a car (and thus potatoes)
You could grow them at home instead. Might have to wait a while until they're ready for breakfast, and you need a spud to start off - PM me your address and I'll post a potato to you.
