What are you baking?

Mmmmm... I might make apple cake tomorrow :hmm:

Which recipe do you use Rebelda?
I used the guardian one, more or less, with half cooking apple half cox, only half the spice and no almonds on top. I keep persevering with apple cake but I don't think I like it :(

I made chocolate cake with icing and sprinkles and anzac biscuits for woodcraft folk pea fair today.

I just had a quick search. I don't have any wholemeal flour in.

Girl would like cake and custard for pud at the weekend... what other cake would be good with custard? :hmm:

I'd do it with the flour you have tbh.

Chocolate cake? Butter cake. Plain sponge with raisins. Banana loaf! Cherry cake with ground almonds (oh God I haven't made one for years and it used to be my favourite). Something with raspberries or raspberry jam so it's like a warm trifle...

I'd eat my own hand if you put custard on it.

What's butter cake?

Like the sound of cherry and almond though, got a good recipe?
Pound cake. Really really buttery sponge. Rich but light and mmmmm.

I have but it's in a book at my mum's. I'll have a look through my scrap book to see if I've written it down but if not I'll have to pop round there over the weekend :)

Sorry if this is a really stupid question, but what is pound cake? I've seen it mentioned in a few places. I've assumed that it's madeira but I'm not entirely sure.

I'm making broccoli and courgette bites. inspired by baby led weaning but I made up the details.

broccoli, courgette, wholemeal flour, eggs, cheddar and feta. Was going to add mint and chilli but I forgot.

needed more cheese and not wholemeal flour.

Does jam count ?
If so, in the last months or so I've got back into doing the jam thing ...
Made some rocket fuel, aka apple and ginger jam, as I have had literally stones of windfall cookers, I think the variety is bramley. (Not sure as the trees came with the house !)
Previously I made some plum, as well as apple and bramble jelly.
And the OH has come back with the makings for three fruit marmalade - All I now have to do, is remember the "family" recipe proportions ... and find my muslin "pips bag" !
(The last time I made really made loads of jam and jelly was over a decade ago - and some is still quite edible, if a bit crystallised !)

Dirty focaccia.

Dirty, because BBQ sauce, chipotle chilli, red chilli, cheddar, mozzarella and kofte toppings.

I'm going to claim that it's salvaged by stuff like a sprinkling of fresh herbs, red onions, actual tomato, red pepper, chopped tomato and roast fennel, mind.

It's about 2kg, I'd guess, from a test lift. I properly hope it lasts me at least four meals.

(It's far too dirty to share; the two low-spiced all-natural veggie ones are for parcelling out, thumbs.)

I'm going to make a rainbow cake for a birthday at the weekend! Six layers, no fucking about :D

Had a practise run (with cheap colours - got Wilton in for the real thing) and while it was not as planned (thin like biscuit) it tasted OK

That's bought icing and the vanilla stuff is heinously sweet so thought cream cheese for the layers and vanilla for the outside...thoughts?

Have you got a clean/plain focaccia recipe? :hmm:

This one was a bit of a cheat. Because I haven't quite got sourdough focaccia working yet. So gave it a bit of a boost.

The original recipe calls for 300g baker's yeasted sponge.

I use 300g starter (plus 5-10g of fresh yeast).
750mls water
50mls decent rapeseed oil
50g semolina
C.20g salt (or less if using a salted / yeasted sponge)
1kg strong white

Best crap out of ^^^ for 15-20mins using stand mixer w dough hook.

Bulk proof for c.2hrs, folding twice. (I use an oiled Homebase plastic lidded storage unit for this).

Flop out onto floured surface. Loosely roll / knock out any huge bubbles. Cut into ciabatta and / or press into round tins for focaccia (I'm using flan trays without the bottoms). Dibble focaccia with olive oil and / or toppings of choice.

Bake @225 w/ half a tonne of steam for c.20 mins.

I like overly sweet so I'd say keep which isn't probably that helpful...

I also hate cream cheese (this is going well :D) but what about whipped cream with some vanilla?
