What are you baking?

Mine were ok, I didn't have any almonds and the dates were a bit old, and had so few ingredients they were less than 1cm thick :D but a mate has made them properly before and they were lovely... very rich.
 
I want to make gingerbread - but can't get hold of treacle or golden syrup :-(

I made gingerbread with brown sugar last week. No one complained. It might be good enough, if you're overseas like me. :)

Baking meringues here. Using the recipe for Italian meringue rather than French. It was worryingly easy. :hmm: I didn't have any cream of tartar so I used lemon juice.

looks fairly rustic, i think i'll use a tin next time.

having to resist cutting into it until its cooled down...
 
the recipe suggested that it would change the texture of the cooled loaf - something to do with letting out steam?

anyway, it's fucking delicious.
 
Anyone know if I could use pekmez - molasses - in place of syrup?
Just googled that - if it's made from grapes, is it sour? You don't want anything that tastes sour or fruity. Wikipedia tells me there's a similar product called dibis made from dates - that sounds more like the right sort of thing. I'd quite happily put dates in gingerbread. Otherwise I would go with honey. I've also made gingerbread often with marmalade, but you probably can't get that either. I'm sure I've seen various syrups in Turkish shops - you just want to pick something either sort of rich or neutral.
 
I always mix pekmez with tahini, so am not sure if it's sour or not. It's not sweet in any case. Think I need to go exploring!
 
Just having a look at what's in online Turkish food shops here... if all else fails you could probably get away with something like fig jam if it wasn't too solid. It would be a bit different, but I bet it'd be nice. I think honey is your safest bet though.

I made another loaf of sourdough last night - tastes great, but the shape was a bit wonky again....

finished xmas cakes, the icing has lustre dust to add a glam touch.


These were my first fruitcakes - I only planned to make one but the recipe was a bit out with quantities.

I didn't realise quite how nice it would be if i tweaked things a little - so, no gritty currants - instead i used dried blueberries and cranberries. lots of rough chopped almonds, candied pineapple etc... the cake is super moist and bloody lovely. so glad i made two - can save the small one for xmas day.
 
I have made a Christmas cake, which is sitting in the tin maturing. My mother rang me up to say that my niblings want to ice it. *I* want to ice it, it's not fair!!!

Why does Xmas have to be all about the kids? :mad:
 
i'm having another crack at sourdough (the loaves i've made so far have been lush, but not quite risen enough - hopefully the 8 hours i've got planned for this baby should be enough).

tonight i think i'll make some more mince pies too. :)
 
Shortbread and cheese biscuits later this evening and possibly at silly o'clock tomorrow morning (as gifts).

My colleague is a massive control freak and it really upsets her that the kids get to decorate the tree. : D
