If you've found the majority of games entertaining I'd say football is a pretty compelling sport to watch and does not need tinkering at all, then. Few sports, if any at all, can claim or pretend all their matches will be compelling to watch. In fact with some of them (I'm looking at you, baseball), just about every single match played is indescribably boring.
I suppose you're right: they can't all be gems, as it is with anything.
Also, I shouldn't complain about the defensive nature of soccer - baseball is my favorite sport to watch. Baseball is the ultimate psychological game. It's a game of nerves, of psyching out an opponent. It's replete with tension and drama.
I know that British people tend to poo pooh hockey, but it's another game that soccer fans should consider. Tactically, and play-wise, the two games are very similar. Teamwork is essential, passing over showboating is a must. The differences are smaller area, fewer players, and the players are moving very quickly.
