I've actually been a bit slack on the courgette front - although I made a really delicious courgette, tomato and mozarella gratin (courtesy of Delia) which uses a fair amount, so I'll definitely being doing that again! :cool:

Only had the courgette, potato and feta cakes ONCE this summer though, so far! :eek: :D
 
Got a couple of lamb chops defrosting but not sure what I'm having with 'em. Spuds and veg I s'pose, but I might get a bit more creative nearer the time.
 
I'm having giant fussili pasta with a spicey tomato sauce with spinach mixed in. On the side will be roasted onion, peppers, tomatoes and a green salad. My BF will drinking deuchars and me vodka...:)
 
Last day of school holidays so me and the littlun have just made mushroom, spinach and ricotta ravioli in tomato sauce. Never made pasta before but it was a doddle and the littlun loved mixing it up and putting it through the machine.

Time for a well deserved glass of red while waiting for GF.

Massive chicken breasts with JD sauce, oven chips :oops: and beans. :cool:

This mutated into a lamb jalfrezi with basmati rice in the end, once I'd discovered that I didn't have any spuds or veg in. :rolleyes: :D

Tonight? Weekend, innit? Might have to be Indian, takeaway and spicy again, then. :)
 
I've taken a lamb shank out of the freezer to make a casserole, but I'm not sure it'll defrost in time.... :hmm: ...if not, a mushroom burger in pitta with salad and a processed cheese slice.
 
I've just made some pesto, so that, with pasta and chopped up tomatoes, and toasted pine nuts on top. There should be olives, but we ate them all up.
I also have some very nice weiswurst, which doesn't technically go with pasta/pesto, but I might have it anyway.
 
A motherfucker of a macaroni cheese, to stick to me ribs in this fucking HORRIBLE weather :mad::mad:

AND a nice bottle of red to go with it, as I've been dead good and not had a drinky since Saturday :cool:

:D i do have it quite a bit!

Chop up a chilli and saute it in 1/3 olive oil and 2/3 butter, add large chopped up clove of garlic til soft.
Squeeze 1/4-1/2 of a lemon into the pan and add some zest
Add the mixed seafood (prawns, squid and mussels), a handful of chopped corriander, a glass of dry white wine and a splash of brandy (optional)
Add fresh linguine to the mix anc cook through until the pasta has cooked and most of the sauce has reduced, takes about 5 minutes.

Easy, quick, tasty and only one pan needed! :D

You can often get those seafood selection bags frozen with those ingredients. Unfortunately some even have crab, I mean 'seafood', sticks in.

The local Portuguese places to us sell some fantastic frozen mixes with big juicy mussels and often clams- perfect for that paella or seafood recipe. Especially if you dolly up with some fresh fish. They're comparatively cheap and a great freezer item for last minute meals.

Probably worth a check in the larger supermarkets - I'm sure Youngs or some similar brand does one. Worst case scenario is that you'll have to pick out the crabsticks. You got anything like a big oriental supermarket nearby either? - often similar in there.

We're a bit lucky with the big Portuguese community and love of seafood around here. They've a weird love of produce from home - everything from the breakfast cereals, the excellent tomatoes, beer, salt and even still water is imported wholesale and sold at good prices.

There's a bit Chinese supermarket in Liverpool - will check next time I'm there I think
 
A mushroom and pea risotto, I think, with a trickle of truffle oil and a nice green salad. Oh, and some fresh pineapple.

They had frozen bags of seafood selection in Tescos <spit> last time I was but that's about a year ago now. They were by the fresh fish counter.
