Risotto with the last bits off Sunday's roast chicken
The dal was very spicy. Still missing something that will lift it from good to great. What's the secret ingredient?
Coriander leaf just before serving?
Tea tonight is some kind of sausage stew, with wine and cream. And brown rice.
I actually forgot about the coriander. I was talking more in general tho.
I use vinegar normally, could try the lime juice. I wonder if the real missing factor is browned onions. I keep thinking I need something quite sweet in it.A squeeze of lemon or lime juice?

Hmmmm. I have done that in the past, but even then there's a certain something missing. Maybe it's just the amounts of fat you get in Indian restaurants.This.

What did you put in it?
I cooked brown lentils with curry leaves and bay leaves. Then did loads of garlic, ginger and chilis together with onions and mushroms, sauteed all of that for a good while, and finally mixed it in with the lentils. Spices used were fenugreek seeds, star aniseed, cumin seeds, turmeric, black mustard seeds and some Sri Lanka curry powder that we got a while back. Splashes of vinegar as well, salt. What did you put in it?

The mushrooms were there to bulk it out a bit. I forgot to say I chucked in some steamed broc and peppers at the end too, just to bulk it out a bit. I've done it with a tomato curry sauce before, which is nice. Still not quite there yet tho. Ah well.Sounds pretty good, although I'd have left out the mushrooms, quite a lot of ingredients there. A tomato adds something, you could try that.

Not quite the same, but very close, yes. I think I'll try and do it in a slow-cooker and see how that goes. Best dal I ever had was supposedly cooked for about 24 hrs, with black lentils.Tried this Urb classic? Very hard to beat tbh

Yum, that sounds ace. I had a slightly less exciting beef stew with mash - a good staple for a Winter's eve.Venison casserole with sweet potato mash
