It was entirely unsatisfactory, and mango? Where? Prawns 30%.
 
Yesterday I had some reheated leftover goulash. I swear it gets hotter! Lovely it was.

Tonight - prob just a chicken leg and salad. Radishes aren't ready yet, though they're bursting out of the trough they're growing in. I check them twice daily :facepalm:

Well, I think my daughter's new lovely g/f is stopping over for the weekend, so that's another veggie in the house - so I think I'll do a nice oven baked porcini and thyme risotto, or maybe just a pea and parmesan one and save the porcini for a nice treat over the weeks leading up to payday.

Was gonna do a carrot and lentil soup, but as I have a life sketch class int morning, and as it makes me fart like you wouldn't believe for 24 hours, I think the risotto's the best bet :D

For pudding, we have more of those 30p-per-packet digestives, with choccy spread on, and I've just remembered we have squirty cream in the fridge from ages ago, so that on top too!

foamy - you're dead right re the disappointing dinners! :( I WAS just going to have toasted pitta and some lemon and coriander hummus...and I should've done, tbf...cos the moussaka was minging! Even with my loathing of wasting any food, I was *that close* to chucking it. I expect the spinach/mushroom lasagne will be in the freezer for some time before I dare to try it :D (I thought they'd be alright, at worst, cos I like Sainsbo's meat free burgers and their cauli cheese bakes - way nicer than Tesco's ones - but it was fucking grim :( ).

Tonight....wine....and pitta and hummus later. ;) :rolleyes:
 
Last night I ended up doing a pasta dish with chicken thighs and a white sauce flavoured with onion, mushrooms, spinach, thyme, white wine and a fuck load of black pepper. A bottle of cava and Profiteroles helped it go down afterwards :)

I am disappointed in the meal I made tonight :mad: Marinated some lamb backstrap with cumin seeds, rosemary, lemon rind etc and cooked into on ridged pan. Made some polenta and some veggies to go with it. I can't cook polenta to save myself....

Tonight for us is salmon fillets, potatoes, asparagus and another veg- psb perhaps? The boy may well have to cook as my back is so sore I can't stand up :(

Sorry!! Only just seen this! I got this from someone on here actually, here ya go:

Oven-baked porcini & thyme risotto

  • 25g pack dried porcini mushrooms
  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, crushed
  • 2 tsp thyme leaves, plus extra to serve (or just a couple of heaped teaspoons of dried thyme)
  • 350g risotto rice (Arborio)
  • 750ml hot vegetable stock
  • 100ml white wine (optional)
  • handful grated parmesan, plus shavings, to serve

Put the mushrooms in a bowl, pour 425ml boiling water over and leave to soak for 10 mins. Meanwhile, heat the oil in an ovenproof pan and fry the onion for 2 mins until starting to soften. Add the garlic and cook for another min.
Heat oven to 190C/fan 170C/gas 5. Drain the mushrooms, reserving the liquid, and chop. Add the mushrooms, thyme and rice to the pan, then stir well. Strain over the mushroom liquid, pour in the stock and wine and bring to the boil.
Season to taste, cover and bake for 25 mins or until the rice is just cooked and all the liquid has been absorbed. Stir in the grated parmesan, check the seasoning and sprinkle with extra thyme leaves and parmesan shavings to serve.
 
Lazy friday night tonight but can't decide between a takeaway chinese or indian meal...or then again maybe a pizza or kebab.....bloody choices.

Just realised I can't cook it tonight now - daughter's g/f has an aversion to mushrooms. Pea and parmesan it is then!
 
Beef and potato pie that I bought from Lavenders and is basically one of their pasties but pie-shaped :cool: carrots broccoli and very mustardy gravy.

Perfect for this lovely Summer weather. :mad:
