What's for tea tonight? (#8)

Attempting to make buffalo kofta tonight. Have found a few recipes but not sure which one to go for. The one with garlic and paprika sounds good.

Anyone got any suggestiosn? Gratefully received, cheers :)

The kids had cheese omelette and chips so I pinched a few of their chips. I shouldn't have read this thread. I'm hungry now. :(

I was hungry so just started cooking the stuff that was in front of me.
Turned out rather well.

Garlic, mushrooms, tomatoes fried in a little butter with black pepper and salt.
Then 2 eggs on top.
Like half way between an omelette and scrambled eggs with other stuff.

Dauphinoise potatoes (last tin) with a chopped up green pepper and extra cheese, and nurnbergers.

Monday night was one of the finest quorn chicken stews I've ever done.

Last night was a stonking arrabiata.

Tonight will be saussies (quorn for him, meaty ones for me and our lass), mashed spuds, steamed carrots (got a fuckoff big bag for 50p so it's carrots in fuckin EVERYTHING at the mo!), and steamed broccoli, plus roast veg gravy. Nom.

30p packet of digestives for pudding. With a layer of cheapo spready choccy on 'em

I must try making arrabiata^. I've only ever had the M&S one

Last night I made some rather misshapen buffalo kofta, with onion, garlic, chilli powder, coriander and mint. Absolutely stuffed, we were

Tonight it's lamb chilli.

You can buy it readymade? But...but..it's one of the easiest and cheapest things in the world to make?! How much does it cost to buy?

You got a recipe for it Ron? I have a honed one that is perfect for us :)

It's only a few quid I think. The usual M&S ready-made sort of price. I only get it when Herself is out for the evening and I can't be arsed doing anything fancy.

I have a recipe right here - a heavily stained bit of paper which has seen me swear over a pot a fair bit. Features paprika, cumin, marjoram and, of course, dark chocolate. Wouldn't mind looking at another recipe though, cheers

I thought arrabiata was just your standard tomato sauce with chili in it. Piece of piss to make. Waste of money to buy.

Well yeh, but it's so much nicer to jazz it up a bit with stuff you'll already have in your cupboards, eh? This is my final honed version:

3 tablespoons olive oil
1 large onion (finely chopped)
2 clove garlic (crushed)
2 hot red chillies or 2 green chillies (finely chopped)
teaspoon of dried chilli flakes or powder, and teaspoon cumin
2 cans (400 grams each) of chopped tomatoes
2 tablespoons tomato puree
4 basil leaves or teaspoon of dried basil and a teaspoon or two of paprika
salt (to taste)
freshly ground black pepper (to taste)
Pasta of your choice – something to catch the sauce, like penne!

1. Heat the olive oil in a large pan.
2. Add the onion, fry gently until golden and softening.
3. Add the garlic and chilli.
4. Cook on a low heat for a minute.
6. Add cumin, stir well.
7. Add the chopped tomatoes/tomato puree/salt and ground black pepper/half of the basil leaves, roughly torn or the dried basil.
8. Simmer for 30 minutes.
9. Cook pasta and add to hot sauce, stirring so sauce fills/coats pasta. Stir over a low heat for a minute. Serve.

Ah, you have the confidence to improvise when you cook. I tend to depend on recipes. My Food and Nutrition O level was a long time ago...
