What's for tea tonight? (#8)

Chicken and vegetable egg fried rice with leomgrass infused rice, chilli and coriander.
It was surprisingly nice for a cupboard foraged meal :)

I made an intensely wholesome soup the other day - smoked bacon lardons, loads of lentils, leeks, carrot, etc. and I am still working my way throught it. With all the Ryvita I can cram.

Same again tonight, but it's all gone now and I've put the pan to soak :D

My daughter's at a friend's tonight, so me and my boy are having FISH!
Soooo...baked trout...and prob some garlic wedges made with some leftover boiled new pots :hmm: ...and a big pile of warm caponata (which he can't get enough of!).

A strawberry and cream yoghurt for pudding for him...grapes for me (and maybe a Breakaway too, tbf  ).

Salad of goats cheese, asparagus, green leaves and Parma ham

I would like to report this was absolutely delicious  However, there was so much asparagus in it that my wee is rather fragrant :hmm:

Dunno what to have tonight. I'm officially on my hols from work for 10 days so might have to be a take away :)

Sounds nice. Is that with potato? Got recipe?

I do a bastardised version of delia's recipe (for some reason I'm not keen on cooked pepper unless it's in a chilli - prefer them raw :hmm:). Anyway...

Chorizo hash
waxy potatoes cubed - new pots work well
1 onion - finely diced
chorizo sliced
garlic crushed
salt, pepper, hot paprika
fresh parsley

• simmer the potatoes for 5 mins then drain and cover with a tea towel
• sauté the onion chorizo and garlic in a little olive oil - add salt, pepper and paprika
• once onions are translucent put aside
• add a little more olive oil + sauté pots until starting to brown
• add the chorizo and onions back into the pan
• bit more paprika, few splashes of chipotle tabasco and cook until brown and crispy
• stir in parsley
• serve with a fried/poached egg on top, or on its own

Last night's corned beef pasties were lovely. Unfortuntely I wasn't up early enough this morning to claim the leftover one for my lunch today

Healthy tofu stir fry and noodles tonight.

Birdseye's finest fishfingers, delicately roasted and served on a delicious bed of Sainsbury's Instant Chicken 'flavour' noodles. Garnished with a jaunty sprig of greenery.

I'm not even stoned. I'm not sure what's wrong with me.

My daughter's off to a birthday party this evening so just me and my boy again....so MORE FISH :D ....well squid and mussels anyway....going to do a fried rice thing with that, some cubes of courgette and yellow pepper, onion/garlic/ginger and some peas.
