Sausage tray bake with potato,.sweet red pepper, courgette, mushrooms and cherry tomatoes. As a little experiment, i sealed the sausages in a pan first ant then deglazed the pot with herby red wine and poured it over the sausages and veggies. hopefully it should be good

If you like anchovies, add 4 chopped anchovy fillets to the chilli and garlic when cooking them for extra oomph.
