What's for tea tonight? (#8)

Still fatigued? Could you get a meal delivered so you have something to eat, or something simple like a sarnie or salad?

Aye, my dear pa fed me spaghetti carbonara in the end. Had to sit up to eat it, mind.
Been told to chill the fuck out for a month, on doctor’s orders, so will hopefully be on the mend soon enough
 
The beef stew that I was intending to do last night except my bit of beef shin from the freezer was really thick and took an age to defrost so I didn't have time to cook it.
It's on now so will be having that later.
 
Shin is my favourite cut for a nice rich beef stew, enjoy.
Yeah mine too, it all melts down into utter lushness - by the time it had defrosted last night I didn't have time to do it justice.
It's on a low heat tonight, several hours, with onion and carrots and a bit of a tin of tomatoes and some red wine and herbs.
 
I have round 2 of last nights' beef stew.
Also N alerted me to the fact that he bought a baguette this morning on his way home and there's a lot of it left so I think a bit of that with some butter will go perfectly with the stew.
Might do myself some more cabbage too, I do love a bit of cabbage.
 
Buggered if I know, went daft and bought all healthy food I have to cook from scratch, so probably the frozen stuff from when I did this before and could be arsed to cook. Do have a new rice cooker tho so maybe a chili since we have 27 left.

Tomorrow is our newly decided breakfast for dinner tho. Saturdays I used to make my version of a Piadina, inspired by Jamie Olivers tuna thing but without the tuna and modified a bit. So its about an inch thick, filled with all kinds of things (SO prefers corned beef, cheese and bits, I have ham, cheese and way too many chives). Then maybe some mod to the bread mix, chili flakes, various spices etc depending on who wants what.

It's not remotely like the 'real' dish, but its our version and I would challenge anyone to eat it as a kebab/whatever choice of after beverage consumption thing and not sleep for a considerable amount of time with a full belly. Having had nothing I was asleep by lunchtime in the sun outside before. Which reminds me the gravity chairs are fucked and we need new ones.

This was really good, overnight the flavours had developed more and the bit of baguette was perfect with it - as I forgot to dust the beef in flour yesterday the gravy was a bit thinner than I'd usually make, but that made it absolutely perfect to have some in a bowl with crusty bread and butter for dunking more like a really rich beef soup.
 
This is Thursday nights' portion, I'm quite pleased with this because I exercised good portion control for a change what with this being in a bowl rather than on a plate and the biggest part of it being the steamed cabbage.

I mean I ate a load of ginger thins biscuits afterwards, but one step at a time, eh?

Butternut squash soup and sausage rolls. Mushroom rolls for the husband. Roast cherry tomato, eggplant pasta salad.

Making large quantities as we have a 6.5 hour train trip to Porto tomorrow and need train picnic and leaving lunch for our cat sitters.

Also making gluten free sausage rolls for besties birthday.

Have a good time in Porto. I loved living there.

Avoid Praça de Ribiera if you can. Some of the cafes will put prices up if you're an obvious tourist. If you're there, facing the river, wander along to the right. There's some good locals bars there.

And, of course, Matosinhos for the fish restaurants.
