What's for tea tonight? (#8)

Beef stew from freezer - making room for the Turkey stew I’ll make tomorrow. My Turkey Maryland was gorgeous last night so tomorrow I’ll make a stock then stew.. MrShakes is gonna make some veg dumplings
 
I did an awesome chickpea curry last night and cooked okra for the first time. My partner has pretty strong memories of hating okra, but she liked it, so that's a win. I've stopped doing roasts on Sunday and use the time to make something that does a few days lunches and portions for the freezer.

However, I also had a pack of chicken drum sticks which I meant to cook with the meal, but totally forgot about and now have to decide what to do with. Had rice for lunch, so don't fancy and just found out I'm out of pearl barley. Pretty first world problem I know.
 
Don't know yet - am working at mums house and I'll be home at 7.30, so I already bought and did some food prep here - bagged 3 x punnets of chestnut mushrooms for 40p each, I've microwaved them then fried the liquid off in olive oil. I toasted a packet of pine nuts in the air fryer (air fryers are quick and amazing for this job). I've chopped two leeks.
I'm either making a cheese sauce with some of the mushrooms and leeks and we're having pasta with it (gluten free penne) , or, if our mate (whose boat is moored next to us) is home tonight, I'll do a risotto. I've got enough leeks and mushrooms for two meals so we'll have one tonight and the other tomorrow whatever.
Whenever I'm at mums if I'm not freezer foraging, I usually go in Morrisons and see what veg looks good on markdown and base dinner off that. The other day I did home made pesto (30p a bunch basil) with roasted asparagus tips (40p a bunch) and pasta. It does depend what manager is on what the discount is, some are stingy, but we seem to be on a decent run of excellent discounts. Does depend how fresh it is tho - they had basil today but it was going off a few days ago. Only fit for bin.
 
Decided to make one of my favourite meals tonight - Fish Pie. I’m hoping to get three dinners out of it, freezing two portions.

Salmon, Smoked Haddock & King Prawns.
Cheese sauce.
Baby Spinach.
Mash topping - potato (obvs), butter, grated mature cheddar cheese & spring onions.
Lots of black pepper.

Served with garden peas and buttered crusty bread.
2 Jaffa cakes. 😉
Lemon Green tea.
 
I am going to make a stew/casserole involving lots of onions and carrots, and whatever meat I can find in the freezer - I think I have some beef shin in there, chicken, and Cumberland sausages, so whatever I find first.
With mash and steamed white cabbage.
It will be for 2 days and I'll add dumplings to tomorrow's portion.

I've not kept up to date with this thread, recent meals have been penne all'amatriciana, Ikea meatballs with chips (well that was more like a late lunch, but didn't fancy tea later), and fusilli with a tomato and hot dog sausage sauce.
